What Did You Eat And Drink Last?

@FreeSoul well done for starting Keto! That really is a lot of vegies. Are you weighing them and using an app to ascertain the number of carbs? What is your carb limit? Mine was 20 grams or less. Are you actually in Ketosis yet?

I've been on Keto six months and have lost 16 kg or 35 pounds. I'm now very near my goal weight so adding a few carbs back into my diet to get into a maintenance cycle and will probably graduate to 50 grams of carbs or less which will still theoretically keep me in ketosis.

Chocolate 90 >% is not cheating and I'd defy the most devoted chocoholic to eat more than a few bits and not feel their craving satisfied. Onions are definitely out but I found using spring onions (scallions) was okay because you can get more bang out of just one than you can from half a white or brown onion.

The dietician recommended the amount of veggies which I just make a guess. I measured first few days, and then I make a guess of how much 7-10 cups might be when I place them in a bowl before extracting the juice. My carb limit is 20 gms as well which don't come from wheat, rice, etc.
If I am in ketosis yet or not? I don't do any tests and I am not planning on one either. I do get craving of carbs and once a week, I do have a cheat meal where I eat a doner. Fortunately, I haven't had any artificial sweeteners until yesterday when I finished 2 bars of chocolates, which is still quite decent compared to bread.
I checked my weight after about 3 weeks from starting the diet, and to my surprise I weighed 1 kg more than when I started the keto diet. My assumption is either I am gaining muscles, or the fat from my body isn't being emptied for which I need to take bile salt which I cannot get in my city. My trouser belt did get little loose, and my shoulders also look thinner.
I started keto and intermittent fasting due to fatty liver; and some of the symptoms of fatty liver such as right shoulder pain have gone. I plan to get tests done this week or the next.

^I'd check that again because all vegies contain carbs and that amount is a lot of carbs. Easily enough to keep you from going into ketosis and there's no point to doing anything keto if you're not getting the benefits.

Carbs from any source are still carbs. Your body doesn't care where it gets it's energy from so long as it does. Of course wheat, rice etc are brimming with carbs but other foods have carbs too.

Calories = energy so you cannot ignore them either. Again your body doesn't care where you get those calories from. So to lose weight or recover a fatty liver being mindful of both Carbs and Calories and staying in a caloric deficit will help jump start your liver and contribute to weight loss.

How much fat and protein are you eating?

Don't forget that whatever you drink might contain hidden carbs too.

I don't do any tests either. But there are certain signs that you are in ketosis. After a while, maybe two or three months they fade out. Tests for ketosis are rarely accurate anyway or at least inconsistent.

You're most likely getting the cravings because you eating too many carbs. Initially when switching over to keto there is a craving or two but once you are well established in Keto those cravings go away and mostly you'll crave protein and fats. The high amount of carbs in the vegies plus the cheat meal each week could be keeping your brain from stopping the cravings. It's well established that eating carby food causes our brains to crave carby food.

^At three weeks into Keto have you experienced the shedding of fluid that our bodies hold when on a carb rich diet? If not then I doubt you've reached Ketosis consistently. Loosing up to five kg of water/fluid is almost a universal reaction when our bodies switch to ketosis.

You'll definitely know about the shedding of fluid because of how many toilet breaks you take!

I've never heard of bile salt and it's not a regular ingredient or necessary for Keto imo.

Amp up your protein and good fats, ordinary table salts and drink plenty of water to help you stop craving carbs.

I think I recall it takes approximately 24 hours for our livers to deplete our glycogen and start switching to fat for energy sources and when that happens you can sort of feel it.

I'm also intermittent fasting 18 hours a day and have a window of six for eating.

The mental benefits of Keto are understated imo. My thinking became much clearer when I switched and overall I'm less anxious and way more motivated generally. I have no idea why but they were features I noticed once well established. Having loads more energy is another benefit.

Lots of H2O - a cup of roasted dandelion root tea with a spoonful of blackstrap molasses - and a small glass of fresh apple juice.

A smoothie with massive amounts of fresh spring greens, two big handfuls of freshly picked chickweed, a big handful of red cabbage microgreens, a few chunks of frozen mango/pineapple, two frozen baby bananas, and coconut water. Tasted like a vacation - especially while sipping it in the sunshine.

Lunch is gonna be a big ol' garden salad with multiple yarden "weeds", spring greens, spring onions, carrots, celery, cucumber, cherry tomatoes, chickpeas, vegan feta, and some leftover maple/mustard roasted cauliflower.

Supper's gonna be baked white sweet potatoes from our garden last year, roasted balsamic zucchini, and more salad.
