This doesn''t have a picture, but we had stuffed pork loin steaks today. it is simple and really good.
2 tbs butter
dice 1/2 onion into small dice
1 clove or garlic diced
1 stalk of celery small diced.
quarter cup of bread crumbs
1 tsp rubbed sage
1 tsp oregano
2 tablespoons of dried cranberries
2 pork loin chops
Melt butter in a saute pan, then sweat the onion and garlic.
When onion and garlic sweated add the celery and sweat.
Add breadcrumbs, herbs, and season with salt and pepper.
saute until breadcrumbs are starting to brown, then remove from heat.
Add the cranberries and mix well.
Using a paring knife cut a horizonal slit 1-2 inches into the side of the pork loin. Carefully insert the blade all the way into the loin and create a cavity in the pork. Becareful to not cut through the flat side of the chop.
Fill the cavity with the stuffing, the brown the chop on both sides.
When the chop is browned, the place in the oven at 350 degrees to finish cooking, about ten minutes.
Serve with your choice of sides.
