I Cooked Myself A Yummy And Nutritious Lunch Today

I have loads of issues with food, which I have not yet written so much about. Today I went to the store after getting the kids to school, and decided I may buy some basil and garlic marinated tofu for myself, even if nobody else in the family likes it.

I fried some chopped red bell pepper in extra-virgin olive oil, then added the tofu, then some slices of zucchini and last some of yesterday's left over pasta. With a little salt and a little more freshly ground black pepper and a dash of soy sauce, it was *delicious*.

I did not dare to fully experience the eating, so even though I sat down to eat, I also read a book while eating (Harry Potter and the Chamber of Secrets, likely for the 11th time). But I did it! I made food for myself, from fresh vegetables and other stuff I like. And I made enough but not too much, and I ate it all while it was hot.

There is hope!

Your recipe sounds really good. Maybe I should try it. I have problems with food too. If I eat slowly and things that are not to 'heavy', I'm okay, and to not eat a lot.
 
Good for you! For years I only cooked what my family liked and not what I enjoyed. Lately I've been cooking both and enjoying the heck out of the foods I've missed. And I've even gotten my youngest daughter to try new stuff, too.

Good for you! I understand how difficult eating can be but that's a huge step! Keep it up! Set a goal for yourself and try to do that more and more often with different recipes.

Pine kernels sound like a great addition to the recipe - I'll try some, lightly fried, tomorrow, and replace the pasta with couscous (half of the tofu package is unused still, and there's plenty of bell pepper and also some zucchini left). Gotta go easy on the soy sauce, though - the couscous could easily suck up too much, and then it would taste only of soy sauce (too salty and definitely boring in excess).

I mix some (ok, a lot...I like it)cumin with my couscous before I boil it and it really has a great taste. Onions, garlic, zucchini, yellow squash...all sorts of stuff go great with couscous.
