What are you having for dinner? (wanna share your recipe?)

We had kleftiko, briam ( but without potato in it) and roast potatoes. I have a whole load of vegetables left to eat through the week :). Good meals leave me feeling ‘safer’.

it’s Greek food. Kleftiko is lamb shank - cooked so the meat is almost melting.
Briam is like ....ratatouille, do you know that? A mix of vegetables? But Briam has potatoes usually and i flavour it with Oregano and thyme. When I make ratatouille it must have lavender in it ( though I can be more relaxed about vegetable choice than many purists). But if you think Greek roast vegetables... peppers, zucchini, tomatoes, aubergines, onion, garlic - and usually potatoes.
 
@Mee , sounds delish, I know ratatouille :) mouth is watering. Love lamb. Company coming this week too, so maybe time to go Greek ;)

Oh yes! Super easy for company because the lamb is long slow cook , and the veg take a while - so you can put in the oven and relax a bit. If you leave potatoes in the vegetables it’s even easier- the side dish is all in one!
There are bound to be loads of recipes on line!
I like lamb because it’s one of the easiest meats to buy with good welfare standards as well as being delicious.
 
I caught some chicken breast on the bone on deep discount yesterday at the grocery - .$44/lb!!! I got 5 lbs for $2.10 for the package. OMG! I wish everyone on a budget could have caught this! So, as I didn't want to heat up the oven and they were going over today, I found a recipe and fixed them in the Crockpot. I don't have an appetite tonight, so just checked the temp and took a tiny bite, and the taste was pretty darn good. I tweaked the recipe a bit, but here you go:

Spray inside of 8-qt oval Crockpot with olive oil. Add 1 cup of water or broth. Combine: 1 tsp Paprika, 1 tsp garlic pwd, 1 tsp onion pwd, 1 tsp seasoned salt, 1 tsp dried Thyme, 1 tsp dried Basil, 1 tsp lemon pepper, and 1 tsp sea salt in a bowl. Massage chicken with olive oil, and coat tops and sides with seasoning mix. Place into Crockpot and cook on high for 4 hrs. I was able to place three in the bottom of the oval (they were huge!) and then placed one straddling two. I didn't touch them during cooking. Check temp at 4 hrs.

There is a lot of broth left. I put it in a dish in the fridge to let the oil collect at the top. It has a nice taste that I think potatoes and carrots might go well with as a side? Anyway, wanted to share. My last attempt at chicken breast on the bone in the Crockpot go didn't well; I think I overloaded it. ? Glad to have a :) result.

Holy wow. Our chicken on sale is $6.99 per pound for breasts & $2.99 per pound for everything else :eek: I feel like walking-like-an-Egyptian football booty dance <shake it! shake shake shake! shake it!> if I can get a whole fryer for less than $10. I flat out refuse to pay the normal $22. If it’s not on sale, I don’t buy it. Huh. Come to think of it? I think they misunderstood the term “sale” :shifty: in my neck of the woods.

Could have been interesting at the Winn Dixie on a Sunday afternoon in the South, in suburbia! lol ?

I was looking for the boneless/skinless which was $2.99.lb on sale. I wish I could have taken more as this is one of my main proteins, but it arrived at the grocery store frozen and I didn't want to refreeze it. I think the grocer put the $4 coupon on the package due to it's sell-by date of 2/24. I wonder what they do on the 24th? I wanted to ask if they donated it to Meals-on-Wheels or one of the soup kitchens, but didn't although I did think of all the families who are struggling so in my area. I need a call list for those folks! I pray grocers don't throw those items away, but do donate. I'll ask the next time I'm in the store.

Grocers throw the meat away on the 24th. It's expired meat. Actually they are not suppose to sell it on the 24th.. Since today is the 24th. That's USA though.
 
@Deanna - That breaks my heart. I will ask if they can coordinate this differently. I know grocers, here, send their bakery items to food pantries. Feeding the homeless and helpless in my area is a huge endeavor that we all throw resources in for.
