Accidental Woohoo!

I was making beef barley stew, and didn’t have any stewed tomatoes... so I made some. Tinned Tomatoes, celery, bell pepper, garlic. Easy peasy. Except I made too much. On a whim I threw a handful of cashews & some chicken stock into the leftovers, let them soak/cool, and hit it with the NutriBullet.

Totally badass creamy zippy tomato soup.

Tin of stewed tomatoes
Handful of raw cashews
Splash of chicken stock (or bouillon)
Let cashews soak soft
Blend smooth.
 
Turkey nachos
Leftover turkey chunked
Corn tortilla chips (Tostada shells were two for a buck with 2 free so ever the one to appreciate a deal, that's what I'm using)
Can of black beans (or pintos or white beans...) drained, rinsed and cooked off to temp
Salsa of your choice OR fresh diced tomatoes
Diced green onions
Diced avocados or chunky quacamole
Cilantro fresh chopped as desired

Smother with Mexican Queso Blanco (White Cheese Dip/Sauce):

  • ½ pound white cheese (some use white American - I use "queso panela"/white skim milk cheese but it is slower to melt and is saltier so I don't add salt to anything and tend not to use salted prepackaged chips)
  • ¼ cup milk (maybe more if you want it thinner) OR sour cream
  • 1 tablespoon butter
  • 1 - 4 ounce can diced green chili's OR 3-4 ounces (2-3 each) fresh jalapenos (seeded)
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic salt or garlic powder
  • dash or up to ¼ teaspoon cayenne pepper

Low and slow stirring frequently in a sauce pan til all is smooth.
Throw it all together over corn tortilla shells or chips, top with cheese sauce... and dig in.

Totally bad for me but a good way to use leftover poultry.
 
Still eating turkey... mom wanted corn fritters (fried) and mister wanted turkey croquettes (but I'm doing those in an air fryer) & gravy. With green beans almandine w/Dutch garlic sauce (nothing fancy just minced garlic & mayo married in the fridge for a few hours to overnight).

Found a baked version for the croquettes (though will still likely do the air fryer):

Corned Beef Hash

Not my favorite version (with beet greens & purple onions... pretty certain ‘Cowboy Corned Beef Hash’ is in this thread, somewhere) or even my 2nd fave version (with chitlins; bouncy pouncy flouncy bouncy fun fun fun fun fun! ;) Seriously, chitlins minced fine into diced corned beef makes it all juicy and succulent)... but straight up leftovers, diced and fried, with spinach and white onion (that I just found, yay!) in place of beet greens & thin sliced peppered purple ones.

Dice/Mince leftover/already cooked corned beef, cabbage, potatoes + raw onions, & spinach. Ring a sauté pan with olive oil. Fry potatoes until golden, then onions until translucent, then add leftover corned beef/cabbage/spinach (and a f*ckload of pepper for the spinach) and stir fry until it’s hotted up, evenly combined, and spinach wilted. Bonus points for whole mustard seeds, added in with the potatoes or onions.
