OK, this is the first time ever to do a blog but it seems to be a free for all... So here ya go.

Gooey, rich Chocolate. I am a major chocolate fan and finding the perfect forms of chocolate for the perfect storms of PMS. If my recipes do not help it, you just ain't human :) These that show up are tested for quality over and over LOL. And having PTSD I think gives us extra excuses to indulge.

Now how do I test quality? If it is so rich my hubby takes two bites and says no way too rich, and my son gets ill over richness (and keeps going back to make himself sick over more) then I know it is just right for me. So fair warning these are not for the faint of heart. But if you need the mother of chocolate fixes take the time out to make these.

The men in this house crack me up. If I make something bad they will not go back. If it is insanely rich they cannot help but go back... But they cannot make it through the whole thing even if they give it a good go.

Also, we know chocolate acts on a chemical level with/for Dopamine and Serotonin. Yes, you may crash later but it is a fun quick fix, at least for me :) So next post will be one of my tried and true favorites. We all should be allowed to indulge every now and then.
 
Very Easy And Quick Fix Super Rich

1 1/2 cups water
2 cups sugar
3/4 cup butter
2 eggs, lightly beaten
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
2 teaspoons baking soda
1/2 teaspoon salt


In a large saucepan, bring water to a boil. Remove from the heat. Stir in sugar and butter until butter is melted. Add eggs and vanilla; mix well. Whisk flour, cocoa, baking soda and salt; add butter mixture and mix thoroughly with beaters. Batter will be thin. Pour into a greased and floured appx. 13 x 9 in. glass baking pan. Bake at 350 degrees F for 35 minutes or until a wooden pick inserted near the center comes out clean. Cool for about 15 - 20 minutes on wire rack in glass pan. While warm whip can of chocolate frosting to soften (I am anti-premix but here is another story) and spread on cake gently. Cover with plastic wrap and leave for and hour. Keep wrap on entire time and eat with in a few days. Gooey moist cake. Icing soaks in and it is just too good.

Very gooey rich cake. It is the bee’s knees.
 
INGREDIENTS

* 2 cups boiling hot hazelnut coffee w/ 1/4 C powdered milk mixed in
* 1 cup unsweetened cocoa powder
* 2 3/4 cups all-purpose flour
* 2 teaspoons baking soda
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 1 cup butter, softened
* 2 1/4 cups white sugar
* 4 eggs
* 1 1/2 teaspoons vanilla extract



DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 9 inch round cake pans. In medium bowl, pour boiling coffee over cocoa, and whisk until smooth. Let mixture "cool". Sift together flour, baking soda, baking powder and salt; set aside.
2. In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 3 prepared pans.
3. Bake in preheated oven for 25 to 30 minutes. Allow to cool.


OK, fair warning this is a THREE layer cake. Awesome coffee flavor. A nice butter cream icing on top is enough. I like this for the coffee chocolate combo.

In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
Bake in preheated oven for 25 to 30 minutes. Do not overcook.

Leaves a nice sugar crust on top and gooey brownies. I am not a fan of icing on brownies… So no recipe.

So glad to see your food blog, Veiled!!! I think this is gonna be death by chocolate :) Seriously, these all look wonderful!! I'd like to try the cake recipe this week if I'm feeling up to it. We still have some chocolate chip cookies around here I made the other day, plus still some apple cake in the freezer. I don't like to have too many sweets around now that I've begun baking. It takes too much exercise to keep up ;)
 
Hey good idea RD LOL! My next will be my peanut butter cookies with chocolate chips. Peanut butter and chocolate are naturals together and this one you have to hide your stash. I cannot keep these in the house for a day and I make a lot. I will have to hunt down the stained paper in a bit.

My lil one told her daddy I needed new cook books as mine are torn and dirty. I also scribble in changes... Mine are very used with greasy butter marks and dough LOL. I will just die if they try to make me get new cook books, mine are just broken in :)

Believe it or not I do have some very light and clean tasting ones too, just they are not as much fun!
