Pancakes!

Ok, so my new year's resolution was to make the most of celebrations... and in the UK it's Pancake Day on Tuesday. It was saying on the television this morning that the US doesn't have a pancake day - but I know you have pancakes, so...

Ideas please!!!!

Ideally I'd like to do a starter pancake, a main pancake and a sweet pancake - but I have no idea where to start.

In the UK our pancakes are really thin, but I'd thought about doing US style thicker ones with maple syrup for sweet ones.

Anyone got good recipes or topping / filling suggestions - or ideas for a main course? I had thought about cheating and doing cannelloni - it looks like a pancake rolled up - and I'm not sure how much batter two people can eat without going a bit green!!!

Three bean vinaigrette

Mushrooms in white sauce (fry mushrooms, add flour and cook for a minute, add milk and stir while simmering - can add black pepper, wine, melt in some stilton, include garlic at the start)

Green beans cooked with a little fresh ginger

Feta, tomato and olives

Only vegetarian suggestions from me!

I think three courses of pancakes is almost certain to to turn the eater green. I think I'd do a lettuce wrap "pancake" as a starter rather than cannelloni in the middle. And I'd stick with the thin ones!!
 
In the US, at least in areas with large Polish populations, it's celebrated with overstuffed jelly doughnuts called paczki and called 'Fat Tuesday'. They're trying to bring Pancake day across the pond- I got an email from a certain chain restaurant that they're serving free pancakes on Tuesday and accepting donations for charity. Not sure how make pancakes without a mix, but for a special treat I throw in some chocolate chips and serve them with jam and whipped cream.

Might want to check into Japanese pancake recipes too. Scallion pancakes are an appetizer type dish, savory and thin so they're not too filling. I've only had them at a sushi restaurant, not sure what goes into them.

Nom nom nom.... I LOVE pancakes and I love the fact that gluten free Bisquik makes pancakes that are just as good as regular Bisquik! Ahhhh, one thing I didn't have to give up, lol. Definitely make some thick & fluffy pancakes. They're so much better than the thin ones!
 
Blueberry pancakes are delicious but if you add bananas to them, they become even more delicious. Topped with maple syrup of course!

For a main, you could always try crepes with broccoli and cheddar (so yummy and easy!) or chicken and asparagus in sauce.
 
I make a big veggie bolognaise for my lot to wrap in savoury pancakes so they get plenty of their fresh veg still and then they like just the plain lemon juice and sugar ones for a sweet one after.

We always make the mix from scratch, and I always do dairy free with soya milk, and sometimes gluten free too with dove farm flour, if I want to eat any too and the children love cooking and tossing them themselves too.

We did potato pancakes when I was a kid, just grated potatoes (on the fine side of the box grater), a grated onion, flour and salt and pepper. Fried in oil, served with butter like a regular pancake, and lots of full fat sour cream. Best not to skimp on once in awhile treats. If I was home I would make them for my family. I think it will be beans and rice for me instead :)
