It's important, then, that you be able to talk about it, and that she be able to engage with you on it, as needed. It's probably going to relate to your other statement to her about wanting less directives and more socratic dialogue (that's my interpretation of what you said). So, theoretically, it really shouldn't matter what she thinks.

If she believes you are in danger because of the practices you engage in, that is entirely different, and you should address that with her. She's under an ethical obligation to address anything that, in her belief, puts your physical health at risk. Have you discussed this with her directly enough, do you think? Or, are you confident that it's not that she's worried about physical harm, it's just that she disagrees with the practices?

Well, I've invited her to always feel free to share any health concerns (mental health or otherwise) with me. I'm open to examination on most everything. So, that's not really an issue, and it's moreso that for example, while we were saying something like "I'm having a hard time finding the will to live but one thing that helps is that I meditate daily in my greenhouse," and she was missing how important the meditation was and saying: but you'll get sunburned, you shouldn't meditate."

It was a red herring type thing, not the time to talk about sunburn. At all.

Your thoughts and beliefs are yours and as any human being, you have a right to human respect despite what ever the rest of the world or some paid for hire counselors opinion is of you or them.
More importantly; if this is a licensed and credentialed trained professional, they should display respect, and especially in light of the fact the of the money they are billing you and any insurance carrier for reimbursement.
Just curious, have you looked this person up with the board of registry?

I can not stress this enough: Anyone who is given carte blanch access to alter any persons thoughts or the way they view these thoughts......... has an extremely dangerous amount of power and control over that person. (not at all unlike a trainer has over a dog) Does this therapist pay your bills or provide your house like your parents or mother in your case should have?
Hell no- it's the other way around, so you be the strong one in this situation.

This past year in Tennessee, the counseling industry lobby was powerful enough to have legislation passed and enacted that would allow any practitioner at any point along the way to up and deny service to any individual simply based on the practitioners personal views. (Google it........ it stemmed out of bible belt sexual orientation opponents, and they actually got it passed)

So when does a practitioners views or personal beliefs mean squat when their professional job is to get the client to examine themself ? ? ?

I refuse to stop saying this, and I'll use this opportunity to declare that the general public does not recognize this is a highly dangerous industry that wields a lot of dangerous power.
This industry is in desperate need of outside third party oversight.
And in this particular case Leah, as well as the therapist, need an uninvolved third party to help resolve the conflict here, what ever it is.............
