What are you having for dinner? (wanna share your recipe?)

Adding this one to try also... have a couple English cucumbers to use... going to shred them rather than chop or slice them and go heavy on the dill.

Cucumber Salsa:
  • 2 medium cucumbers
  • 1 jalapeño pepper, halved and deseeded
  • 1 clove garlic, crushed
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped fresh dill
  • 2 tablespoons extra virgin olive oil
  • sea salt and black pepper, to taste
  • Optional: 1 cup full-fat yogurt or sour cream
 
White bean & turkey chili.

P.S. That hot crab was a hit however it was way too saucy for only 8 ounces of crab or imitation crab/whitefish. I ended up tripling the fish and baked off in the oven it was two thumbs up from the family. I did use red miso and malt vinegar... and paprika with some soul food seasoning instead of the cayenne. On the sesame seed loaf it was really good.
 
I’m not eating food-food right now (meal replacement shakes) so I decided to do some experimenting, since the results don’t matter.

Made coconut milk buttermilk (coconut Greek yogurt + coconut milk + applecider vinegar), marinated chicken legs in it overnight, then dredged them in seasoned half tempura / half wheat flour, & shallow fried them.

TheKiddo was over the moon about them... but to me the coconut flavor was reeeeally strong & begged for either spicy sweet piri-piri sauce, orange marmalade, or to go all in with shredded coconut & coconut extract. I was surprised by the coconut flavor, made that kind of buttermilk substitute dozens of times for salads, pancakes, baking, etc. and it usually just zip-zip.. vanishes. Even back when I wanted it, and was trying to accentuate it, so I’ve learn to just give up on it. Straight buttermilk sub, check. LOL. So it was startling. Coconut fried chicken. Huh. Not bad, but definitely needs something / missing something oomphy.
 
Just as an aside, I have been cooking and eating soups for about a month, it’s just easier for my northern work, I get easy lunches and dinners when I am on call at six. When I got home this time I made sauerkraut soup, and have been eating that. As a single person, a single pot of soup goes forever. Haven’t been actively dieting, but little to no junk food, have had a couple of meals out and a few beers once home, and I am down eight pounds. Have no doubt that it is due to the high soup consumption, they have all been healthy, and if one bowl doesn’t cut it, I eat two. However, tonight’s dins also included half a jerk chicken pot pie from the Pie Commission. As well as the end of the sauerkraut soup.
