I’m not eating food-food right now (meal replacement shakes) so I decided to do some experimenting, since the results don’t matter.
Made coconut milk buttermilk (coconut Greek yogurt + coconut milk + applecider vinegar), marinated chicken legs in it overnight, then dredged them in seasoned half tempura / half wheat flour, & shallow fried them.
TheKiddo was over the moon about them... but to me the coconut flavor was reeeeally strong & begged for either spicy sweet piri-piri sauce, orange marmalade, or to go all in with shredded coconut & coconut extract. I was surprised by the coconut flavor, made that kind of buttermilk substitute dozens of times for salads, pancakes, baking, etc. and it usually just zip-zip.. vanishes. Even back when I wanted it, and was trying to accentuate it, so I’ve learn to just give up on it. Straight buttermilk sub, check. LOL. So it was startling. Coconut fried chicken. Huh. Not bad, but definitely needs something / missing something oomphy.
