The simplest explanation of entropy is that the particles that make up everything in our world prefer to be in a state of chaos/randomness ("entropy"). In chemistry, it means that chemical reactions stop when the greatest level of chaos has been reached.

If we want to get technical, randomness and chaos are not the same thing, but that's another story...
