Colorful and hopefully optimistic but maybe hateful occasionally

At my house we have certain staples.
I'm a good cook. I'm turning towards traditional portuguese dishes, so I've been making lots of stews and oven dishes.

Best treat about living here:
Duck rice. I«ve actually been making it with cauliflower instead of rice, either way it's good. It's basically slow cook the duck for 5 hours, with all kinds of chorizos (ours are better than the spanish ones!), then after that's done, let it cool and shred the duck. Cook the rice or the cauliflower with some veggies (cabbage and carrot is what I use, some onion and garlic) and mix everything, add some nutmeg and paprika (you can add to the slow cooker too, but I find adding it after gives more taste), mix everything up in a casserole and put it in the oven until golden on top.
It's amazing.

Other dishes we make.
Skews with chorizo.
Cod fish in the oven with garlic and olive oil.
All sorts of fish dishes, there's one particularly good called Caldeirada, that's basically lots of different fishes in a pot with tomato, onion and potato.
Regular steak - I love steak. I make a mean Wasabi Mayo to use in it. (basically just mix wasabi and mayo, add some herbs, I usuallly add thyme)
and more that's not coming to mind right now.

Outside the house I eat all sorts of portuguese dishes, but too long and too tired to explain them all :D
On the boat we ate lots of Cod and Haddock with olive oil and onions. I made a pretty good kale soup. The guys were all Portuguese that taught me. They used to even save the big Cod fish heads. I think they made soup with them.
 
Also, can you describe chorizo?
Chorizo is made out of pig's intestines!!! :P Ahaha, disgusting, but they're really well cleaned. They stuff the intestines with ground meat and cartilages. It's part of the Kill the Pig tradition, the whole town gathers together and butchers a bunch of pigs (chickens too), use the whole pig for all sorts of purposes.
It seems disgusting but I've actually had loads of fun going to those things. But I always refused to watch the actual killing the pig, couldn't eat otherwise - city girl, they called me.
One of my favorite portuguese dishes is one where a whole chicken is used (the sauce is made from the blood) - It's actually amazingly delicious if done right.

Yeah, Cod is THE portuguese ingredient. There are -not shitting you- more than a thousand portuguese Cod recipes.
Everyone makes up their own recipe too, I did too and it's a great dish - basically shredded Cod with potatoes cut in tiny cubes, onions, garlic and parsley.
Kale soup isn't a thing here, but everyone I know who knows portuguese people in the US talk about kale soup for some reason. I find that really odd. There's a sort of cabbage soup that might be similar, but not quite... I'm not sure, but kale soup is definitely not a thing. I didn't even start seeing kale on the supermarkets until very recently.

I have to go on Facebook where some of the people I knew have all that stuff posted. It was in Provincetown. I was what they called a "washashore" and an honorary "Portagee" because I worked on the boats and shacked up with one of the townies. There was something called "vinyadiles" which is the phonetic pronunciation. I think it was made from codfish heads. I'm motivated now I'll find out. Thanks for bringing it up. I still love that place.
 
Count me as one of the people who hates sweet potato and marshmallow casserole. I really don't like sweet potatoes and it's too bad because they're one of the most nutritious veggies. But I don't.

Honestly, I think that casserole was invented just to get children to eat some damn vegetables at Thanksgiving and then adults remembered eating it and made it for themselves.
