Horray, KP is cheering - the Christmas cake is in the oven. Now, I mustn't do what I did 2 years ago. I dropped the cake taking it out of the tin :eek::cry:.

Next snow covered earth squares - please note this is me being energetic :roflmao:
 
Cake is still in the oven and looking good. AND the snow covered earth squares are made and in the fridge.

WTF, I could make them proper snow covered, I've just looked out the window.
 
White Chocolate and Cranberry Fudge
12oz (350g) granulated sugar
1oz (25g) Butter
6fl oz (175ml) evaporated milk
3 1/2oz (100g) dried cranberries
10oz (300g) white chocolate chopped

Line a 10x8inch baking tin with parchment (grease proof paper)

Put sugar, butter and evaporated milk into a heavy based pan. Heat gently until the sugar has dissolved completely.

Bring to the boil, stirring continuously with a wooden spoon, then reduce the heat and simmer for 5 minutes.

Immediately remove from the heat then add the cranberries and chocolate. Allow the chocolate to melt, then quickly stir the mixture and pour straight into the tin. It will thicken immediately.

Spread into the tin and chill until firm (I leave mine overnight) and cut into squares.
 
Ginger & brandy log - very easy to make & lovely for Boxing day​
I pkt ginger nut biscuits or Cornish farings (these are ginger biscuits made by cornish baker)​
Enough brandy or sherry to dip each biscuit in​
600mls double cream - lightly whipped​
Cherries & nuts for decoration​
  1. Dip both sides of each biscuit in brandy
  2. Sandwich in pairs with the cream
  3. Stand biscuits on end to make a 'log'
  4. Cover with the remaining cream
  5. Decorate with cherries & nuts
  6. Place in fridge for several hours for the biscuits to soften.
