Thank You @Unraveling1 for taking the time to read what I have written. Sometimes the simple meals are the best! Many a time I have eaten the types of foods you describe ( I love a meal of fruits, or some grilled veggies) . I lost 100 pounds a couple of years ago by eating a lot of apples and pineapples, so I know they are really good for you if they helped me slim down. I live in the country and I have meat and taters guys. As for me, I can do without meat, its just not important to me, I can get the protein from beans or peanut butter, but the men folk think they have to have meat! What made me post the earlier post was my husband came home, it was just the two of us and he asked me what we were having for dinner tonight and I said "Oh I didn't know you wanted food for dinner, hell I got beer". He quickly told me he was VIP and needed meat and I could eat vegetarian anytime he is gone LOL~ (He wasn't being mean and I am not a vegetarian, and I did make some meat)
It just got me to thinking, he and the boys would all just be very unhappy with me if they actually had to depend on me in the shape I am in now, because when its just me here, and 80% of the time it is... a bowl of cereal, some yogurt, fruit, veggies.... it all works for me! If I had children or a husband at home more than 2 nights a week I would have to have takeout on speed dial or purchase a lot of frozen meals and pretend I was a gourmet chef. (my mom is a real chef by the way, so I am actually expected to cook and cook masterpieces)
Something I have taken an interest in is stretching food and couponing. So I do muster up some meals that my husband will eat and enjoy and not realize are healthy and meatless or near no meat. I do have everyone addicted to breakfast taco's right now and that is very cheap and simple and you can go meat or no meat on those.
I can see that I may need to go back to using the crock pot on Thursdays so he has food on Fridays! He eats out all week, so I understand he wants a home cooked meal come weekend. Honestly a lot of weekends I plan ahead for when he gets home to have a hot home cooked meal for him, but weeks like this week where I was triggered like an automatic weapon going off, I need to have more back ups! Tonight I rummaged through the fridge and mustered up a little of this and a little of that and made a home made pizza. I was wiping my brow on that... not sure how I pulled that off but I did! However now he is requesting twice backed potato soup tomorrow.... ugg... I will spend hours in the kitchen!
