I'm Vegan, so I make this often.

Quinoa and Edamame seasoned with soysauce and a side salad.

Just cook the Quinoa on the stove top.

Also, this is a very good source of protein. So are mushrooms if you put them on the salad or in with the Edamame.

Thanks, MO, I love quinoa; it got me through my days in Ecuador! Your vegan-ness is a great help, too.
 
Talk of frito pie made me realize I haven't had it in two decades. So lunch? Tostito pie! (no fritos on hand...)

While it isn't a "10 minute cook time" in the proper sense, chili (in a slow or pressure cooker) takes about 5 minutes of prep time, set and forget. If doing it in a pressure cooker, all cooking is done in one pot.
