I saw the play production of this recently in Chicago. It was really extraordinary. The horses are life sized puppets, each with 3 pupeteers controlling the figure. The horse figures aren't really all that realistic looking, even - more "artsy" and without fur. But those guys manage to get the gestures and manneurisms of a horse to come across so well to an audience, that you really do get wrapped up in the story. It received a standing ovation the night we say it, and even though I knew how it would end, having seen the movie, I found myself getting choked up. I'll have to read the book now. And if it comes to your area, I would say it is definitely worth seeing the play. Take a look at You Tube and search "War Horse Puppets" if interested.
