Ok just for yall that don't know.. the Cajuns (Acadian French) were exiled from France circa 15ooish... they were Catholic and the king decided they were a bad influence to the Protestants like him... so he shipped em off to Canada.. they all entered through LAbrador/Nova Scotia and Newfoundland...
Ok fast forward another 150 yrs or so... the French territories were gradually taken over by the British during a war.. so once they got to the Acadian teritories they said hmmm... they are French *AND* Catholic so we double hate them so they shipped em all south to Louisiana...
We get to Louisiana and boom... the French lose it, then the British take over, then Boom the Spanish take over.. then Boom he French again until the US finally bought it in the Louisiana Purchase... (which is the US from Miss west... all for like 80k)
Soooo... we get there and we go forth and multiply... native indian blood, spanish blood, african blood you name it we have it in us... and the cooking shows it...
the US finally recognized us as our own ethnic group in 1990ish... there is a new designation called White - Acadian French... kinda like White - Hispanic
So anyway enough of the history session... you want recipes you just tell me what kinda meat you wanna put in it.. if I don't know my mom will lol...
