ok ya'll have a born and bred coonass here... if yall want any recipes or have questions on how to do something to make a cajun recipe just right here is the place.. Imma post some cajun and creole recipes for yall...

Ok just for yall that don't know.. the Cajuns (Acadian French) were exiled from France circa 15ooish... they were Catholic and the king decided they were a bad influence to the Protestants like him... so he shipped em off to Canada.. they all entered through LAbrador/Nova Scotia and Newfoundland...

Ok fast forward another 150 yrs or so... the French territories were gradually taken over by the British during a war.. so once they got to the Acadian teritories they said hmmm... they are French *AND* Catholic so we double hate them so they shipped em all south to Louisiana...

We get to Louisiana and boom... the French lose it, then the British take over, then Boom the Spanish take over.. then Boom he French again until the US finally bought it in the Louisiana Purchase... (which is the US from Miss west... all for like 80k)

Soooo... we get there and we go forth and multiply... native indian blood, spanish blood, african blood you name it we have it in us... and the cooking shows it...

the US finally recognized us as our own ethnic group in 1990ish... there is a new designation called White - Acadian French... kinda like White - Hispanic

So anyway enough of the history session... you want recipes you just tell me what kinda meat you wanna put in it.. if I don't know my mom will lol...
 
Ok the first recipe is actually Creole... influenced by later people who came to LA direct from France.. that mixed with some slave influence on the cooking... Anyway... Food that is similar to Cajun but has a different twist... usually tomatoes and okra will point out it is creole... Tomato from the pure French and the Okra as a African add in...

Lemon Pork Chops

4 - 6 pork chops, 1/2 inch thick at the most...
1 white or yellow onion (I use yellow)
1 Green Pepper (bell pepper for some, same thng)
2 lemons
1 bunch parsley
1 stalk celery
1 bunch green onions
1/8 tsp red pepper (cayenne pepper) or 1/4 if you like it a little spicier...
1/2 tsp corn starch

In a deep skillet or dutch oven brown the pork chops well on both sides...
Pour in the tomato juice until it just covers the pork chops... place 1 slice of onion... bell pepper ring and lemon slice on the top of each pork chop... spread sliced celery around the sauce to cook it... cover and cook for 45 minutes...

Remove the pork chops keeping the vegetables on top and add 1 TBS minced parsley and the chopped tops of 4 green onions, red pepper and corn starch to the remaining tomato juice. boil for 5 min then simmer for another 10... pour the tomato mixture over hot white rice with the pork chop to the side..

Serve... cold ice tea goes well with this...
 
I think a little later imma serve up my shrimp ettoufé recipe... ettoufé is cajun french for smothered... smothered in kinda the same sauce as the pork chops without the lemon...

the staples of cajun cooking are onion, green onion, parsley, celery and garlic... add it to your fav meat and you approximate something cajun...
 
Nice. You said the magic words. Corn bread. Jalapeno corn bread. Nothing like it. Now if we could just have someone from Mexico on here, I could start my "Eat you way into Piano sized Coffin!" diet.
 
lol I got your back on that too... I don't cook much mexican but this school district I work for is 80% hispanic... as well as the employees... tell me a meat I can give you a recipe for that as well... Vero (Veronica) has 1000's... she is my bud...
 
Hardcore Squirrel:

2 large squirrels, dressed and quartered (or rabbit or nutria!) Or one could cheat and use chicken, I guess...
1 cup flour
1 tablespoon each salt, black pepper, brown sugar
Real butter, one stick
2 large tomatoes, 1 zuchini, and a cup of sliced okra

Rinse critter quarters and soak for 1 hour in brine. Dsce tomatoes, zuch and okra and saute in butter. Combine flour, salt pepper and brown sugar. Drain and pat dry critter parts. Place in bag with flour mix and shake to coat. Remove critter parts and place in skillet used for veggies. Place veggies in the bag and shake to coat. Dump entire contents of bag into skillet and fry until critter parts are done.
Serve hot with beer and tabasco.

wow I totally let this one slide... looking at the date on the last post I know why tho..

And Angle I can dig around for some fried stuff, can you get shrimp there? I can def get some fried fish recipes and fried chicken and the sort... on to my next recipe, lo and behold it is fried!!:

Corn Fritters

2 eggs
1 cup milk
2 cups flour
3 teaspoons baking powder
1 tps salt
1 tsp sugar
1.2 tsp paprika (preferably smoked)
2 cups drained can corn
2 tbs shortening (Crisco etc)

Beat eggs, stir in milk, flour and other ingredients. Drop 1 tsp into deep fryer and fry till golden brown.
