What are you having for dinner? (wanna share your recipe?)

I don’t add anything to my scramble,, but turning the heat to low after heating the pan is essential to having a moist, fluffy scramble that will not bounce off the walls. Now for tonight’s soup for tomorrow, a simple but oh so tasty chickpea and spinach number: Spiced Spinach and Chickpea Soup • My Pocket Kitchen. I don’t add the spinach to the soup, I find it goes slimy in the leftovers. I add a handful or two to the bowl or the pot I am reheating it in. This has quite the nice kick from the crushed red peppers. Since it is in the minus 20Cs here with wind and blowing snow, any kind of heat is most welcome.
 
We have no Trader Joe’s here, but I will be spending some time in Florida soon. Forget Disney and Universal. I just wanna go visit Trader Joe’s.
LMFAO… I can barely walk out of that store without spending +$100. Just because almost everything costs $3. I swear I can do math. Just, not apparently in THAT store.
 
Bison-beef burger , pan fried, on white bread. Listened to Splendid Table podcast today and the chef of a Manhattan restaurant, Hamburger America, said the “Oklahoma onion burger” is when you flip it put a pile of shaved onions under it. Which I did and I could have done more because they shrink. Also learned that the oldest continually operating burger joint, Louie’s Lunch in Newhaven CT, serves theirs on toast because they were making them before hamburger buns were invented so I felt authentic with my bread. I put ketchup, yellow mustard, and mayo on mine. The hamburger scholar recommended putting the bread on the burger after you flip it so I did that too. Served with kosher dill pickle spears. Oh and remembered on a recent episode of the YouTube show EmmyMade where she was eating In ‘N Out different styles… there’s one called Gorilla Style apparently? Where you put the fries on the burger and Emmy said that in Brazil a popular hamburger style is to put little crunchy potato sticks that are like potato chips on the burger and I had some of those because my daughter has been loving and requesting Utz Potato Stix. The meal was very satisfying to say the least!! Bite of crunchy juicy burger, bite of sour pickle—back and forth. 💃
 
Back on my food plan, the scales have not been kind. But my go to snack that is simply addictive is Dill pickle hummus, we have Summerfresh up here, not sure where else it is, but I could eat that with a spoon, never mind a carrot. A little protein with a big wallop of taste. Sometimes sold out in our grocery stores, so I buy two to have on hand. Making a cold plate with some deli meats/salamis, some veggies and cheese and this hummus make for a quick and easy light lunch as well.
 
Lil mini warm choc puddings 🥰

- Melt 200g dark choc, 175g butter, 250g soft light brown sugar & a splash of vanilla in a bowl over boiling water, remove from heat

- Once melted add in 50g coco powder, 85g plain flour, lil blob baking powder & 3 eggs

- Ladle into buttered muffin tin & bake for 18 mins at 160fan

- cool for 10 mins - taaaadaaah

You can experiment to your hearts desire on the basic mix. Chuck a frozen raspberry square in the centre, for a fancy finish. But you can throw chopped nuts, choc chips, any kinda fruit, basically anything you’ve got lying around in at the end and it’ll turn out grand 👊💪
