Ploughman's lunch & a beer

Used to be served in pretty much every pub going when I was younger.
Bread, butter, pickle, onion, and maybe some ham, salad etc

It sounds like it's what ploughmen have eaten for ever but actually it was made up by the cheese marketing board.. tastes good anyhow.

I'd throw it all in the food processor with some chickpeas/baking powder/baking soda/non-dairy chocolate chips, then bake it and have more chickpea blondies. :)

Risotto.

(Vegan) Sauté leeks & olive oil & aborio rice, white wine, stock & stirring until creamy, fold in fire roasted eggplant & garlic sautéed radicchio, serve, drizzle over balsamic vinegar for a bit of sweet to balance the bitter, not too much because the leeks will already be bringing sweetness. Top with diced peppered tomatoes, eggplant, & finely shredded basil.

I'd toss the beer to my hubby while I whipped up a coconut cabbage curry dish, and I'd add some cashews and chickpea tofu chunks. Damn, I might have to check my cabinets and make that for dinner tomorrow. lol
