My entire job is nothing but instructions
Then you need to be managing your dysregulated responses throughout. As in, ground and down-regulate all the time.

That might sound excessive, but it's actually doable. Just takes constant practice. And developing stronger skills around physical response regulation will help. After practice, physical skills (like breathing) can become useful for immediate regulation.

If you lose control quickly at work, and want to keep working, you need to learn to operate all of the time in a more regulated state. It sucks, but it's how it goes.

Nah, I understand. Yesterday went way better in general and each time the mentor (same guy as the other day) was giving me instrustions I would tell myself in my head "he is giving you instructions now" to stay aware of my mental state & stop the blindness that's occuring (which it did) and I was able to deploy some DBT skills at the moment. Did the same for when I was giving customers instructions. Basically it was "whether I thought I needed it or not" type of thing cause triggers can be tricky it seems. It seemed to have worked. My biggest issue was the blindness but I can see how deploying skills all day is a needed thing for that reason and other triggers that could be hidding. I guess that will take practice. I did start to doodle as well. That has helped a ton. So I'm trying but it seemed to have gone away or inproved greatly.

As of today OJT is officially over so no more mentors. Never been happier to be out of OJT. So in general things should start to calm down. I think after I see my therapist on Tue, they will calm way down. But will try to deploy as much DBT as I can throughout the day and will try to continue to stay aware as this does happen on calls at times so by no means am I saying its all over as it isn't. Just saying it should start to calm down to a more manageable level soon.
