Meatballs For Fathers Day (A Nigella Lawson Recipe)

Happy Fathers Day to All Dads Out There.~

This is a Nigella Lawson recipe and is taken from her popular Channel 4 series Nigella Bites, based on her popular book How To Eat. This is a great recipe for meat balls esp for fathers day (or tomorrow), I vary the sauce , it is a good base recipe though for the meatballs also.And despite what it says it doesnt take that long.~ I hope you enjoy ~

This is definitely time consuming, but here at least I make no apology for that. And there is nothing like serving up a bowl of pasta with meatballs to make you feel like an Italian mamma out of a Hollywood film. I don't mean one of those redoubtable types in amorphous black, think Sophia Loren in the kitchen. It works for me!!!! (am smiling...)

The trick to these meatballs is to keep them small. Don't actually use a teaspoon, but use about a teaspoon's amount of mince to roll each ball. If there are children around, so much the better; they can make good meatballs- and they do tend to like making these, apparently!!! My son was too old when I first found this recipe but he did help me make others when he was littler. But otherwise, they're easy enough, and the slow repetitiveness of the action can be rather calming.

To go with these divine meatballs, I like tagliatelle, or Spaghetti, angel hair I think is too fine but good also and hay... making fresh pasta is an experience worth trying (lol) No one's saying you have to make it, but actually once you do try, you'll soon see that it's not difficult.

I had a pasta machine for years before I was brave enough to use it. For some reason I thought it would be a performance But I tried and it isn't, and I rather like the mood of peaceful concentration the activity ushers forth. And it's a great way of playing in the kitchen with children: they love turning the handle, which is actually a help, not often the case when the children are cooking with you. (this last bit is apparently a direct quote from Nigella, I have never made pasta, I have had the forune of living next door to the girlfriend of a guy from Polish descent and she showed me some recipes... but I just cant remember them now - ptsd really sucks)

Quantities are easy so long as you remember you need one egg per 100g of 00 flour (now available at most supermarkets), and that on average, one 'egg ' of pasta, as it were, feeds two generously.
Serves 4-6

Ingredients
Meatballs

* 250g minced pork
* 250g minced beef
* 1 egg
* 2 tbspns freshly grated parmesan
* 1 garlic clove, minced
* 1 tsp dried oregano
* 3 tbspns semolina (or breadcrumbs)
* good grind black pepper
* 1 tspn salt

Tomato sauce

* 1 onion
* 2 cloves garlic
* 1 tspn dried oregano
* 1 tbspn butter
* 1 tbspn olive oil (she says not extra virgin here- but I use extra virgin myself ...)
* 700g bottle tomato passata
* pinch sugar
* salt and pepper
* 100ml full fat milk (and I dont tend to use milk in this recipe but again this is because I dont always have it in)

How to make the meatballs and tomato sauce

1.Just put everything in a large bowl, and then, using your hands, mix to combine, before shaping into small balls. Place the meatballs on baking sheets or plates that you have lined with clingfilm, and put in the fridge as you finish them.

2.For the sauce, put the onion, garlic and oregano into the process and blitz to a pulp. Heat the butter and oil in a deep wide pan, then scrape the onion-garlic mix into it and cook over a low-medium for about 10 minutes. Don't let the mixture catch, just let it become soft. Add the bottle of passata ( I make my own although NIgella is cute it she can start getting expensive and I am broke so the meat is a budget killer sometimes in itself)and then fill the empty bottle half full with cold water. Add this to the pan with the pinch of sugar, some salt and pepper, and cook for about 10 minutes.

3.The tomato sauce will appear thin at this stage, but don't worry as it will thicken a little later. Stir in the milk, and then drop the meatballs in one by one. Don't stir the pan until the meatballs have turned from pink to brown as you don't want to break them up. Cook everything for about 20 minutes, with the lid only partially covering it.

4.At the end of cooking time, check the seasoning as you may want more salt and a grind or two more of pepper.add cooked and drained Pasta and serve



(I use semolina just because i can keep it in the store cupboard and I try not to eat bread too much so as it is just me when my son is away at uni and I dont have bread in often) although thinking about it I dont tend to make this recipe unless it is for him when he visits... with his girlfriend hopefully next time I have mince in the hope that it wont be too long until I see him again now.

Quick White Bread

Fresh yeast is best but you can use dried yeast, it just takes a bit longer for the dough to rise. If you use dried yeast allow 1/4 oz / 7gm of dried for every 1/2 oz /15gm of fresh.

25gm/1oz fresh yeast
350ml/14fl oz warm water ( just above blood heat )
25mg tablet 0f ascorbic acid (vitamin c)
600gm/1lb 8oz strong plain flour
15gm/1/2oz salt
1 level teaspoon sugar
15gm/1/2oz butter
Milk or beaten egg for brushing

1 Blend yeast and warm water and crush tablet into yeast liquid
2 Put flour, salt and sugar into a bowl and rub in butter.
3 Add in yeast liquid and mix thoroughly until dough leaves sides of bowl clean
4 Turn onto a lightly floured board and knead for about 10 minutes.

For soft rolls,
Divide the dough into 18-20 equal pieces and shape into rounds
Place onto a buttered baking tray, cover and leave to rise until, again they are double in size.
Brush with milk or butter and bake in middle of oven gas 8, 15-20 minutes.

Then enjoy as you wish.
 
Banana Smoothy

Two ripe bananas (cut into bite-sized pieces)
1 tsp cinnamon
1 tsp vanilla
1 tsp pumpkin pie spice
1/4 cup of brown sugar
1.5 cups of milk

Put everything into a food processor, blend until smooth and enjoy. It's a great afternoon pick-me-up.
 
Meatloaf Rings

Loaf ingredients:
1 pound ground turkey
1/4 cup spiced bread crumbs
1 egg
2 slices of bread cut into bite-sized cubes
1 tsp Italian seasoning
1 tsp oregano
1/2 tsp salt
1/4 tsp pepper
half cup of parmesian cheese
1 tbsp minced garlic

3 large green peppers
1 can spaghetti sauce
Olive oil

Mix all loaf ingredients well in a large bowl. Cut each bell pepper into three equal sized rings. Remove seed and ribs. Stuff loaf mixture into each ring. Heat large frying pan on medium heat and pour two tablespoons into the heated pan (always heat the pan before putting oil in). Put rings into frying pan and sear each side for a few minutes.

Take casserole dish and put two tablespoons into the bottom and place all the seared rings into the dish. Cover completely with spaghetti sauce and put into a 350 degree oven for 30 minutes.
 
****For a change of pace****

Use the above recipe and replace Italian spices with cilantro and oregano with cumin. Replace spaghetti sauce with salsa and add a can of drained corn to the meatloaf mixture.
 
Does anyone have a good source for kamut flour. I recently took a personal chef postion and the couple doesn't eat wheat due to sensitivities to gluten. I know Kamut has different properties than traditional wheat and can be easily tolerated by gluten sensitive people.
Any kamut recipes???

Found some and used it today. It was really good. It is a very ancient wheat and easier on the tummy than the wheat we eat nowadays. If you know folks with wheat or gluten sensitivities, often it can easily be tolerated very well by them. I've been doing a lot of wheat/gluten free R and D as of late and I really like the texuture and the flavor.
 
Does anyone have a good authentic posole recipe? I would prefer one that's more of a stew that than a soup. Thanks in advance.

I have not looked in lately, I am really sorry I have not seen your recipes before now.

The banana smoothie sounds wonderful, not sure hubby would eat the meat loaf. He is a bit picky with his food just now.

If your still looking for posole recipes I can have a rummage through my files and web sites.

I came on to see about chocolate recipes I have just found, will do that later now.

Traditional Posole Stew.

3 1/2 - 4lb Pork Shoulder
2 x 30 oz Cans Hominy
2 Medium Onions Diced ( not minced )
2 gms Crushed Leaf Oregano, or 1 gm Powder
3 Coves Garlic Minced
6 Green Chili Peppers Seeded and Chopped or 2 x 4 oz cans chopped green chili
2 tsp Chili Powder or 2 Dried Red Chili's, crushed after seeds are removed.
2 Chicken Stock Cubes
1 Small Can Whole Kernel Corn
Salt and Pepper to taste

Method

Boil pork for 2 hours in enough water to cover. Cool pork and save water.

Return meat and all other ingredients to cooking water and stir well.

Simmer for another hour, stirring occasionally.

Add more water as necessary, to achieve a stew like consistency.

Troll Snot, Bugs And Mud Pie

You will need.

1 Packet of lime jelly ( Jello I think it's called in the US )
2 Packets of Chocolate Angel Delight, or any chocolate flavour desert mix.
1 Packet or a lot of Ghoulish Jelly Sweet ( Spiders, Frogs, Worms, Snakes)
White Chocolate Mice for decoration.

Make up the jelly as the packet instructions and leave to cool, but still liquid. Add in the jelly sweets and leave to set completely. If you put sweets in when jelly is still warm they will dissolve.

Make up the angel delight and pile on top of Troll Snot.

Add the chocolate mice on top, then chill until needed.

Don't forget to use a clear dish so you can see the bugs in the snot.

If you can't get lime, you can use red Jelly instead, then you could call it,

Trolls Blood, Bug And Mud Pie, instead.

Great fun for kids of all ages.
 
Hob goblins Brew, For Kids Of All Ages.

For this you will need

Orange Squash

Jelly Sweets, again bugs of all kinds. Spiders, worms, frogs, snakes.

Natural food colourings to turn your squash any yucky colour you like. ( The darker the better, so you can't see to the bottom. )

Paper cups you can't see through.

Put a bug in the bottom of each cup, then fill with your juice concoction.

Sit back and watch the kids reaction when they see the bugs. Unfortunately this only works once, but fun all the same.
