Thanks Amethist! I jotted that down- I've tried the various custard and pudding mixes we have over here but it's just not the same! When my jeans become snug, you absolutely know I've been fooling around with the trifle recipe, around Christmas time. This reminds me to offer it up to ITL, who was looking for suggestions to negate the adrenaline calorie-burn. A good, gooey, satisfying trifle should make some headway.

I'd love the recipes in one place, so am looking forward to that, thanks also!
 
Christmas Specials

Mincemeat And Marzipan Ice Cream

Serves 4 to 6

100g/4oz Marzipan, cut into small pieces
600ml/1pt Double Cream
6tbsp Sweet Mincemeat
2tbsp Amaretto liqueur ( You can substitute this with Brandy or whiskey

A few flaked almonds for sprinkling on top when serving.

Put the marzipan and cream into a saucepan, cook over a gentle heat, stirring well, until the marzipan has melted.

Add the mincemeat and mix well, then stir in the Amaretto. Leave to cool.

Pour the mixture into a plastic tub, put the lid on and place in the freezer. A "Fast Freeze" setting is best, if you have one.

An hour or so later, when the ice cream has begun to freeze, take it out and stir it well so the fruit is mixed in evenly.

Freeze for another hour or until solid.

Remove the ice cream from the freezer 15 mins before serving to allow to soften.

scoop into small dishes and top with flaked almonds
 
Hi, I'm starting this thread after speaking to some friends on the forum. We all have favourite recipes that we would like to share.

If possible they need to be easy and straight forward, I don't need to say that some days it is an effort to get out of bed let alone cook.

OK, I'll start,

Sausage and Chickpea Casserole
Sausages (I allow 2-3 per person and preferably spicy)
Chorizo sausage cut into bits
1 tin chickpeas (400g)
1 tin tomatoes (400g)
1/4 tin water
A block of mozzarella cheese (sliced)
2 - 3 slices of french stick (baguette)
Salt, pepper, (paprika - optional)

Oven 190deg C

Brown the sausages (I grill mine) then cut into pieces.

Put chickpeas, tomatoes, water, chorizo pieces and sausage pieces into a casserole.

Stir together and season to taste.

Put in oven with covered and cook for 45 minutes.

Place sliced bread on top of casserole and cover bread with sliced mozzarello.

Return to oven for 15 minutes or until cheese has melted.

Enjoy!

Tasty fresh fruity drinks to kick start anytime of your day. All you need is a Juicer and the fresh ingredients.

Lemonade, that tastes like sherbet.

2 Golden delicious apples
!/3 of a lemon, wax free with the rind left on.
2 Ice cubes.

Simply juice apples and lemon, then pour over the ice cubes.

Mixed Berry Blast

100gms/4oz Blueberries
50gms/2oz Cranberries
100gms/4oz Blackberries

Juice them all together and serve.

Wake Up With The Green

1/2 Cucumber
1 stick of Celery
Handful of Spinach
6 Golden delicious apples
1/4 of a Lime, peeled
1cm/1/2 inch piece of fresh Ginger
Handful of ice

Juice all together and pour over the ice.

Hot 'n' Spicy

3 Apples
1 large pinch of ground Cinnamon

Juice the apples, then pour into a pan. Heat gently, but do not boil. Once the juice is hot, pour into mugs and add the cinnamon.

Pear & Pineapple with Ginger

2 Firm Pears
1/4 of a large Pineapple
1cm/1/2 inch cube of fresh Ginger
Handful of ice.

Juice the pears, pineapple and ginger. Cut up the ginger and pack between the fruit so it will crush properly in the juicer. Pour over the ice.
 
Naught but nice and a great gift.

White Chocolate and Cranberry Fudge

12oz (350g) granulated sugar
1oz (25g) Butter
6fl oz (175ml) evaporated milk
3 1/2oz (100g) dried cranberries
10oz (300g) white chocolate chopped

Line a 10x8inch baking tin with parchment (grease proof paper)

Put sugar, butter and evaporated milk into a heavy based pan. Heat gently until the sugar has dissolved completely.

Bring to the boil, stirring continuously with a wooden spoon, then reduce the heat and simmer for 5 minutes.

Immediately remove from the heat then add the cranberries and chocolate. Allow the chocolate to melt, then quickly stir the mixture and pour straight into the tin. It will thicken immediately.

Spread into the tin and chill until firm (I leave mine overnight) and cut into squares.
 
ITALIAN CREAM CAKE
1 stick butter
½ Cup Crisco oil
2 Cups sugar
5 egg yolks
2 Cups flour
1 tsp soda
1 Cup buttermilk
1 Cup Chopped pecans/or ½ Cup each pecans & walnuts
1 Cup angel flake coconut
5 egg whites beaten stiff
1 tsp Vanilla
Beat butter, oil, and sugar till creamy. Add yolks and beat well. Add buttermilk, soda, and flour beat. Beat egg whites till stiff, and then fold into batter with pecans and coconut. Pour into 3 greased and floured 9 inch pans. Bake at 350 for 20-25 minutes. (Add a cup holding water to set on the oven rack as you cook).
FROSTING
1 box powdered sugar
1 8oz pkg cream cheese
3 Tbsp cream
½ stick butter
1 tsp vanilla
½ cup chopped nuts
Mix all ingredients in order given and frost. (I make a double batch to frost between the layers and complete outside.
Dust top with coconut.

Hot Chicken Salad

This is one of those recipes I have in my head so will try to do amounts properly. You can do amounts for ingredients as you have the taste for them, like, my daughter dislikes onions so only uses a teeny amount.

1 small chicken, or equivalent amount in chicken breasts, cooked and shredded
8 oz sharp or medium chedder cheese, depending on which you prefer. I like sharp best but can't have it. :)
half medium onion, grated
3 sticks celery, chopped
12 oz can of crunchy fried La Chow Chow Mein noodles, or whatever brand is available
half cup slivered almonds
1 to 2 cups mayonaisse
Salt and pepper to taste

That's pretty much it. You mix everything together except the noodles, putting the mayo in a little at a time. People like different amounts of mayo, so mix until moist but not too wet. Then put the noodles in, mix the whole lot together and bake in a cassarole dish @ 350 for 30 minutes. Everyone in the family has this recipe and it tastes differently from everyone because we've all figured out how we like it best. :) Mine usually also has a big chunk of crushed garlic in it also.
 
Oh hurray, a cooking thread! Cooking is my VACI (vitally absorbing creative interest). It has also helped me to better manage my many environmental and food allergies (which I think are a result of PTSD, as no one in my family has these issues, but that's just a guess). I am being mentored in my area by a Chinese friend (who is a folk medicine doctor taught by her father in China) and am learning asian cooking styles. I also have an Indian friend who is teaching me some, and my husband is loving all of the experimentation. This weekend I am going to do a seafood stuffed eggplant and I'll come back and put up the recipe. I am allergic to many basic foods, so I'm doing a celiac's diet but am also allergic to dairy, yeast, cane sugar... too many to go into really. But I have moments of being very content in the kitchen and cooking for friends and family.
 
Condensed milk cookies

700g flour
500g butter or margerine
1 tin condensed milk
250ml sugar
10ml baking powder (only if self raising flour isn't used)
5ml vanilla essence

Cream butter and slowly add sugar.
Add baking powder and essence
Add condensed milk alternatively with the flour (the mix may not require all of the flour but it does need to be quite stiff)
Mix well

Place small spoonfuls well apart onto a greased baking sheet.
Bake at 170 deg c for 15 min or until golden brown.

Carefully place on a cooling rack until cold and crisp.
 
*blush* I didn't forget... I just haven't made that eggplant. I hope I get some motivation before it goes bad. I even moved it this morning to get it out of my line of vision when I go to the kitchen. Upset stomach, not up to cooking these past few days.
