Hummus

Ingrediants
  • One 15-ounce can (425 grams) chickpeas
  • 1/4 cup (59 ml) fresh lemon juice, about 1 large lemon
  • 1/4 cup (59 ml) tahini
  • Half of a large garlic clove, minced
  • 2 tablespoons olive oil, plus more for serving
  • 1/2 to 1 teaspoon kosher salt, depending on taste
  • 1/2 teaspoon ground cumin
  • 2 to 3 tablespoons water
  • Dash of ground paprika for serving
Directions
In the bowl of a food processor, combine tahini and lemon juice. Process for 1 minute. Scrape sides and bottom of bowl then turn on and process for 30 seconds. This extra time helps “whip” or “cream” the tahini, making smooth and creamy hummus possible.
Add the olive oil, minced garlic, cumin and the salt to the whipped tahini and lemon juice mixture. Process for 30 seconds, scrape sides and bottom of bowl then process another 30 seconds.
Open can of chickpeas, drain liquid then rinse well with water. Add half of the chickpeas to the food processor then process for 1 minute. Scrape sides and bottom of bowl, add remaining chickpeas and process for 1 to 2 minutes or until thick and quite smooth.
Most likely the hummus will be too thick or still have tiny bits of chickpea. To fix this, with the food processor turned on, slowly add 2 to 3 tablespoons of water until the consistency is perfect.

Serving
Scrape the hummus into a bowl then drizzle about 1 tablespoon of olive oil over the top and sprinkle with paprika.
Serve with carrots or other cut vegtables

Storing
Store homemade hummus in an airtight container and refrigerate up to one week.
 
Camping food

Went fishing yesterday... Was reminded that trout/ steelhead/ salmon/ oysters/ mussels... Just about anything I can snitch up out of local waters? + camp fire or BBQ + cast iron skillet + garlic + butter or olive oil = dinner. Bonus if there's a bottle of white wine kicking around in the car. Double bonus for watercress / berries / apples / or anything else green or sweet being in season and snitching that up as well. Free food. Pacific Northwest Style.
 
"Swamp Water" : Equal parts of sweet tea and lemonade. I make my tea with honey and use sugar free Crystal Lite. Two clients tried it this weekend and liked it. Got a pitcher in my fridge now (decaf) for when I'm sick of drinking water.
 
Here is a cookie recipe that is so quick and easy, even lazy teenagers will make them.

Lazy Cake Cookies
1 box of yellow or white cake mix
2 eggs beaten
1 stick melted butter
2 cups chocolate chips

Mix together and bake in greased 9X13 pan at 350F for 20 minutes. Cool and cut into square... easy peasy.
