I'm scared of my cast iron skillet.

All great suggestions. My hope is that you keep using it until you find out what works for whatever you are cooking. And Teasel, a cast iron dutch oven is the best ever for making gumbo!!! I had a 'gumbo dedicated' cast iron dutch oven. Talk about a perfect roux!! Your first one turned out awesome and you were using a regular pot. Keep trying. Once you get used to cooking with cast iron, it's the best!!!

And @ladee I've got something that might be like a Dutch oven, it's cast iron, and the inside is lined with enamel. I call it a casserole dish though - looks like Link Removed
 
LeCruset & similar enameled Dutch ovens, or aluminum ones, etc.; just don’t absorb the complex oils from gumbo, and impart greater and greater depth as the porous cast iron only ones, is all.

GIANT WARNING : Don’t do LENTILS in a cast iron anything, unless it’s enameled. They turn crude oil black. It’s alarming, although theoretically safe to eat...

((and also possibly the origin of Spartan “black soup” that there is no recipe for, although quite a lot of speculation amongst visiting dignitaries. Spartan boys/men got as much of the black soup as they liked... but by tradition everything else they ate had to be stolen or hunted. No buying of food stuffs allowed. The crime of buying food was worse than getting caught stealing it, by about double the number of lashes as showing up empty handed, and 10x more than getting caught. Wacky society. A strong one, for true, but wacky))

...but it TASTES absolutely awful, unless you’re on your period or have lost a lot of blood recently. The iron content is off the charts. For whatever reason lentils just leech the hell out of iron pots. 🤢

((It makes sense the Spartans loved it, though, IF it was the content of “black soup” as they sparred daily with edged weapons... cuts and bruises both scream for a high iron content diet))
 
Yes, but like Friday said, there are enameled ones too. I don't know why they are called that. But hell to the no on cooking lentils in a cast iron dutch oven! But I also had a pot I cooked beans in and had a rice dedicated pot!!

Guess it depends on where you live I guess. Gumbo, beans and rice were staples in the part of Texas I lived in. It's nasty ol' noodles here! Yuk. Don't cook em' and don't eat em'.

Little did we know the vast amount of information we would need for a dutch oven!! Glad we are on this forum that answers ALL questions. 😋 😉 😂
 
I made hash browns! In the scary skillet! Very nearly skipped it and used my usual non stick but thought no, come on, have a go.

So, I heated the pan, too much, it started crackling which scared me, turned down the heat. Still, when I put in oil and butter the butter burnt instantly 😮

Well, learning curves and all that. The potatoes were absolutely delicious, really crispy, tad browner than they need be perhaps but hey.

Mr loved em too. Happy days.

Excited to hear the hashbrowns were really brown!!! It is a learning curve. But once you get the hang of it, you will be able to cook anything but beans in it!! Yay YOU Teasel!!
