To be perfectly honest... there is no way I would take on even that with baseball. Just too many games... and honestly, if you only listed wanted games / high profile ones, I could completely understand due to the sheer number of games, day after day.
I looked at the listings... impossible to do with one or two people IMHO, daily. If anyone lists favourite teams, maybe focus on those, and if not, then your favourite and maybe some high profile ones that are going to be close, thus highly watched.
Then you have to factor in... there are also about 6 - 8 other sports all running during the same period around the world, many of which I want to list, which I have realised that for even those, I will be listing my favourites, recommended listings, and pretty much odds and end rounds from all sporting events, because I just don't think it can be done without dedicated people per sporting event.
Looking at baseball, I think it would need about 5 people to bookie, so that nobody was doing too much, and that you have to factor in people being away, work, holidays, sick for PTSD, et cetera... maybe even more than that needed for baseball.
The first few rounds of tennis was really straining for me, to get them all listed, and just for the singles. It was something like 64 games a day, with two outcomes per game obviously, for the first two days, then halving every two days. The first week was pretty full-on... and baseball has a lot of games, every single day of the week.
