General Wanna talk about cooking for your vet who dislikes alfalfa sprots?

I don't know if I would call sushi a rare delicatesse here, either. There are lots of sushi restaurants around, and you can even buy freshly rolled sushi at some of the local grocery stores.
 
My family is pretty "new" to the US - I'm only the second gen born here. They came from Germany and Hungary, so German and Hungarian foods were prominent in my life, and I know how to cook quite a few of them (my sufferer also loves my stuffed peppers, paprikash, meatballs and cabbage, kielbasa with cabbage (or sauerkraut) and pierogi or spaetzle...etc etc). I don't think he necessarily grew up with them, but definitely developed a liking when I made them for him.

Just keep in mind, @Never_falter, that food doesn't need to be labeled "health food" to be good for you. Homemade applesauce? You can control the sugar, and whether the apples are peeled (and lose some of their fiber) or not. Homemade foods in general are better for you, because you control what goes in them, and usually don't have the preservatives and junk that goes into store-bought or restaurant stuff. Need to cut back on sodium? You can do that. Need to cut back on fat? You can do that too. Need smaller, more realistic portions? Easy! It's the processed sugars, like in sodas and mass-market candies, or the excess sodium and fats that you need to worry about, because there is SO MUCH in store-bought foods.
 
In some parts of America, we eat zucchini fritters. The one important difference in cooking them is that you have to get all of the water out of the zucchini. After you shred them, you add about 1 teaspoon of salt per pound of zucchini. They need to sit for at least ten minutes. You can put them in a colander and use a spoon to squeeze it out or you can put handfuls of it in a cheesecloth or towel and squeeze it out that way. Tons of water will come out.
 
I've been eating low carb to help combat holiday weight gain... I've been on a muffin cup meal kick. You can make them in advance and heat them up when you want something quick. It's a controlled portion, and it's pretty easy. My kids have started eating them too because it's easy to grab and go.

You can add whatever toppings you like to these.

We make these a lot... it lets me get my pizza fix without all the bread... And like the breastfast ones above, you can customize these to your tastes easily. Pizza Pucks
 
A recipe for German-style wholegrain wafers, especially for @JadesJewel but also for everybody else, One needs:

*a spoon full of butter, warm not fresh from the fridge
*200 Gramms of whole grain flour
*75 Gramms of Sugar
*baking powder
*4 eggs
*200 Gramms of curd cheese
*vanilla sugar

Mix, bake wafers, serve with hot cherries or hot apple sauce
 
Here's a spice recipe for ground pork (breakfast style) sausage, it's really versatile and can be used to substitute beef in recipes like chili and tacos.

(Apologies for the U.S. measurements)

Ingredients:

2 lbs. ground pork
2 tsp. ground sage
2 tsp. sea salt
1 tsp. ground black pepper
1/4 tsp. dried marjoram
1 Tbsp. brown sugar (light's best)
1/8 tsp. crushed red pepper
Pinch of ground cloves

Directions:

Put ground pork into large mixing bowl.

Add spices.

Mix together thoroughly by hand.

Shape into patties, or put directly into a large pan and crumble-fry on medium-high heat with a dash of olive oil.
 
Here's a few plant-based ideas that my meat eating hubby goes back for seconds/thirds for and has met the approval of several others who don't typically choose plant-based options....hope there's some yumminess to be found for others:

I also add a little smoked paprika and cayenne powder along with the chili powder and turmeric.

I buy garbonzo (a.k.a. chickpea) bean flour at Kroger and/or Martin's (less than $3.00 a bag) - and I like to spice mine up with garlic and onion powder, smoked paprika, chili powder, dill, rosemary, basil, oregano, etc. to add some more zing along with it absorbing the flavors of whatever it's cooking/simmering in.

Black salt is a great additive to make the chickpea tofu taste egg-like. (Kala namak - Wikipedia) It's great to use for scrambles made with peppers, onions, greens of your choice,any other veggie of your choice, mushrooms, garlic, nutritional yeast (for a cheesy flavor) and serve with roasted potato chunks and some (g/f vegan) toast with earth balance soy free buttery spread. Mmmm....now my belly's growling. lol

Walnut "meat" is an absolute favorite and versatile....burritos, tacos, taco salads, lasagna, pizza, shepherd's pie, spaghetti sauce, any ground meat recipe, etc., etc.:
How To Make Spicy Walnut Tacos - I soak my walnuts for at least 2 hours, use bragg's liquid amino, I do not use coriander, I add some smoked paprika, and occasionally add a drop or two of liquid smoke and blend it all in the food processor just a little so it doesn't get gooey. I prefer a crumbly texture. Then I use various leaves and other veggies in place of pasta (like the romaine taco boat, swiss chard burrito wrap, butter cruch lettuce pockets, etc., and use vegan cheese/nutritional yeast.

Here's a lasagna idea that's super tasty, albeit time consuming, as is regular homemade lasagna:
THE Best Vegan Lasagna - made with thinly sliced eggplant or zucchini "noodles" rather than typical noodles, walnut meat, some homemade tofu chunks (at times), and homemade cashew cheese ( I prefer to make my own whenever I can rather than buying the pricey store bought stuff)

I have been thinking about Valetines day. I know my man is planning something for me but I have nothing for him and thought of cooking something romantic. Anybody has any ideas? Must not be healthy.
