What Did You Eat And Drink Last?

Munched on red grapes while I mowed, then had a garden salad topped with homemade spinach hummus, kalamata olives, hemp hearts, and papaya poppy seed dressing...and supper was steamed brussel sprouts, leftover sauteed greens/shrooms/onions/kidney beans/corn/carrots/etc., with a baked sweet potato...and a small Asian tea cup full of dairy-free chocolate chips for dessert.

Various dip / Houmous type things including spiced split peas
some slices of salami
Mini carrot cake cup cake

Sauteed some tatsoi greens/spinach/kale/garlic/sweet onion/yellow bell pepper/vegan Italian sauasage-like substance/oregano/basil, warmed up some marinara sauce, and served it on top of rice noodles, then topped it off with a vegan parmesan cheese-like concoction made with ground sunflower seeds.
 
Mmmmmm....beets rock my vegan world. :) Yum! Hoping to grow a bumper crop of them this year. Love the beet greens, too.

I agree with your vegan fare sentiments, @intothelight . However, when the chef (speaking only for myself here) is preparing foods for other folks who still like to partake in the disturbing-to-me animal flesh/by-product scene, one must try to prepare menu items that also make their taste buds happy as well.

Personally, I could very happily and healthily live the rest of my life without ever having to prepare another meat/cheese/milk/butter/etc. substitute, but glad I now know how. Learning how to do that in such tasty ways greatly helped me end my life long health-robbing addiction and heavy cravings, too. Perhaps one day my loved ones taste buds will also adjust and realize those things simply aren't necessary. It's also fun to share the substitutes with others who are die hard animal product fans and are strongly convinced nothing could ever compare....until they taste something that surpasses their expectations. :)

So far today, lots of H20, lemon H20, herbal infusion with stinging nettle/burdock root/ginger root, and some navel oranges. Dairy-free chocolate chip, peanut butter, banana nice cream will happen at some point for a snack as the day keeps heating up.
 
@Tornadic Thoughts I've been pretty much vegetarian for a long time, but after getting cancer and learning about the high levels of the casein protein in bovine dairy and quit using it. I use almonds, cashews and soy for dairy replacement, but I still love goat cheese and it is a special treat. Still working on ways to increase protein so that I can keep my RBC and hemoglobin counts up. Cooking with an iron skillet helps, but always looking for iron rich and protein rich foods.
