Hodge, tamari is a more intense but less salty type of soysauce... its flavor is great for strong marinades and dipping. unlike soysauce it is fermented. Braggs liquid amino acids are a low sodium non fermented version of soysauce it has a mild flavor and many helpful amino acids.
Veiled, tempeh is fermented soybean cake, its super good for you and is easy to digest...its kind of nutty. Many people who don't like tofu love tempeh because the texture is way diofferent. We like soy but try to mostly avoid nonorganic heavily processed products. I love tempeh though and it's bonus points that it's fermented because I'm way into fermented foods... they help my digestion (I have had serious stomach problems) as well as improve my energy and add many nutrients/vitamins to my diet.
Thai rolls sound terrific, I just came across a recipe for lettuce cups that sounds similar...
