Hi @littleoc - here is my biscuit recipe They are super duper easy, fast. ..measurements are in grams It's my recipe but there are about 10,000 online if you want to try an alternative variation on the same idea.
Pre-heat oven to 160 - 180 C (350 F) ordinary oven. If using fan forced oven reduce temp., by about 20 degrees...
Use non-stick baking trays or baking paper or greased tray - whatever is easier.

Wet Ingredients - put into a large saucepan
125 grams butter
2 Metric Tablespoons Golden Syrup
1 Metric teaspoon bi-carbonate of Soda
2 Metric Tablespoons of water

Dry Ingredients - put into a large bowl
1 Metric cup of plain flour
1 Metric cup of Desiccated Coconut
1 Metric cup of Rolled Oats
1 Metric cup of Castor sugar

Loosely mix/combine dry ingredients together in the bowl.

Using a wooden spoon - gently heat all wet ingredients together and stir till melted (and it foams) then remove from heat.

Using a wooden spoon combine dry ingredients into the wet ingredients in the saucepan until all mixed and moist. Should be moist but not too sticky or too dry.

Using your hands pick up mix ( slightly smaller than a golf ball size) and roll in the palms of your hands and drop onto tray. Flatten slightly with the back of a fork - leave about a 1 to 1 1/2 inch space between balls. They spread out.. so don't crowd them.


Bake in oven for about 10 -12 minutes or until golden brown.

Take out and let them cool for 5 minutes or until they set. Put into biscuit tin when cool. They keep for ages...

***Variations:-
I only use Golden Syrup but you could adjust the quantity and use Maple syrup if you like.
I reduce the cup of sugar to 1/4 cup and add extra oats.
If mixture is too dry to roll in your palms add a dash of water to mix. If too wet and gluey add a little more oats. You should be able to roll them without them sticking to your hands...
I'm not sure how many this recipe makes...I make different sized biscuits every time but you should get maybe 12 -14 or so..
