A black bean burger served on top of a bed of greens with tomato, red onion, sriracha vegan mayo, and spicy mustard, alongside a few sweet potato chips and my first attempt at chickpea tofu french fries...seasoned with garlic powder, sea salt, turmeric, and black pepper,with some ketchup....they were awesome!
I sliced the firm chickpea tofu into french fry sized pieces and put them on parchment paper/cookie sheet and put them under the broiler (not directly underneath, but the next rack down), turning them every 3 minutes for about 12-15 minutes...they got nice and crispy on the outside. Next time I'll probably cook them a little longer for even more crisp. The hubby anticipated they would surely suck (not a big tofu fan, at all), but was pleasantly surprised and said they definitely earn a spot on the "I would fix that again for sure!" list. :)
