What Did You Eat And Drink Last?

  • 6-10 Chicken Thighs, skin on, bone in
  • 2 Carrots sliced on a slant
  • Runner Beans Sliced
  • Red Pepper Sliced
  • 2 Potatoes cut into smallish peices
  • 1 Onion sliced
  • 2 Garlic cloves
  • 1 Tin Tomatoes
  • 2 tbsp or more of Biber Salçasi Tatli (Turkish sweet not spicy red pepper paste)
  • 1 chicken Stock Cube
  • Worcestershire Sauce
  • 1/2 tsp Paprika
  • 1/2 tsp Cayenne
  • lots Oregano
  • Hot water
Fry Onions till soft & browned
Add garlic, herbs and spices, for 1 min
add chicken, Tomatoes, Biber Salcasi, Stock & Worcestershire Sauce, and Simmer for 30 mins
Add carrots n potatoes, simmer for 15 mins
Add runner beans n red peppers and simmer for 1 hour
Carefully remove chicken thighs, remove bones and skin and return meat to the pot
 
Yesterday, I had little sweet peppers stuffed with eggless chickpea "egg" salad and a big garden salad for lunch, then had juice pulp/black bean/chickpea "burgers" topped with fresh spinach, red onion, pepper relish, dijon mustard, veganaise, and ketchup on toasted 7-grain sprouted bread served with yukon gold roasted potato wedges for supper. Sipping on a ginger root/stinging nettle/red clover infusion currently and contemplating what to throw together today.

Kindness and community here did something wonderful to me today. The recipe Bearlinda shared became visual and somehow I was motivated with some energy.

With the weekly care attendant visiting I asked her to help me cook but i knew i only had few ingredients available.

With a clean pot I boiled water and added chicken stock, i didnt have chicken but found some ground beef, garlic, onions, carrots, brocolli, and PAPRIKA!!

I started getting overwhelmed and worked with the care lady to brown the beef with onions.

Then i dumped everything into the chicken stock and boiled.

It was nowhere close to a stew. Instead it became the healing Chicken Soup for my soul. Thank you all.

What I did tonight was an achievement.

Chicken soup with paprika garlic onion beef with carrots and brocolli.
