What Did You Eat And Drink Last?

Lots of water....herbal infusions....and more water....and a couple peaches.

Made a pot of chickpeas and will be making eggless vegg salad and some more chickpea blondies or perhaps a chickpea curry...decisions, decisions.

Made some salsa to preserve.

Still need to make that potato leek soup.

Still waiting for a gluten-free whole food plant based vegan fairy or two to show up....meanwhile...back to work.
 
Tried a new baked eggplant recipe tonight and served it with (s)mashed garlic potatoes made with almond milk and vegan buttery spread, along with steamed flat green beans seasoned with thyme, salt, and pepper....my taste buds were impressed...but need to kick up the spice game a notch or two with the eggplant next time, and remember to make some gravy to go along with it...leftovers will be tomorrow's sandwich, right after I make more buns:

T’day - there were potatoes involved. :eek: :bag: :speechless:

Okay... so I have a really badass Italian recipe for thinly sliced potatos in olive oil & garlic & fresh herbs, stacked & baked until crispy outside, creamy inside, similar to a potato au gratin w/out cheese/butter/cream... which is what I usually go to when “everyone else” has potatoes au gratin at big family meals. But I was feeling jealous last night, and decided to try and alter my (really badass) vegan smokey Mac recipe for potatoes.

It didn’t work.

At all.

It wasn’t bad per se, but OMFG, the Italian recipe just beats it hands down, head and shoulders above, other body parts god knows where but somewhere... better.

Jealousy? Loses again! One of these days I’m just going to learn that.
 
Last night I whipped up some cashew based "not yo' cheeze" and some walnut taco "meat" to go along with the salsa the hubby made and made us a couple taco salads.

This morning, lots of lemon water, then more water, then cantaloupe.

Lunch will be a salad at my favorite cafe where I'm having them fix mom some economical meals for the week that I can just add the veggies and snacks to so she can just grab and go when it's time to eat. Takes a lot of the pressure off of me and I don't have to feel like an exposed recovering crack addict in trying to fix it all myself while still trying to maintain my own food flow/wellness. Hopefully a win/win.

Supper will likely be stuffed eggplant, using leftover not yo' cheeze, walnut meat, and some homemade marinara.
 
Water...more water....some lemonade....red grapes and bananas....leftover angel hair pasta mixed with vegan butter and garlic....small bag of sweet potato chips....eggplant/spaghetti casserole topped with vegan cheese and sprouted multi-grain garlic bread.
