Ooooo...coconut water with melon juice, @Teasel ....what a great idea! What kind of melon?

And red potatoes with garlic butter, @LuckiLee....yum! Add some fresh dill, too, and boom! Might have to fix that one night this week.

A whole lotta washin', spinnin', shuckin', and choppin' happenin' in our kitchen today.

Fresh garden salad with spinach, kale, mesclun mix greens, radish greens, purslane, dandelion greens, basil, yellow bell pepper, tomatoes, green onion, radishes, carrots, red cabbage/apple kraut, and chickpeas topped with tahini mustard dressing and served alongside steamed corn on the cob.

Had a big smoothie packed full of kale, then some more kale, frozen bananas, chia seeds, sunflower seed butter, and oat milk several hours before dinner to fuel me and the hubby for yard work and gardening tasks. He used to just want a small taste, now he asks for the BIG glass full. ? I sure do love this time of year in regards to the freshness of so many of my favorite things. ? So grateful.
 
Crunchy split peas, made the same way as the crunchy mung beans, and turned out well. Soak 1/2 cup split peas until they are swelled up (1-2 hours) then spread out on a towel to dry for at least 20 minutes. Put 1/4 cup oil in a pan. Heat the oil until it is shimmering, on med or med high, not too hot, no smoking. Fry those peas for about 5-8 min or until they start to turn tan. Garnish with salt, chile, and minced green onion.
