I have what is called a Crock Pot or Slow Cooker. This allows you to put some rice and beans into it along with some veggies and let it do the cooking while you are out for the day. Can you obtain one of these? You can order them from amazon.com if you have access to a bank card or credit card. I saute the onions before I add them, but again, as others have mentioned, this is not required, it just helps the soup or stew taste better. Salt is good, as is a bit of pepper for some folks, but I personally have found that pepper makes anything you cook in a Crock Pot or Slow Cooker taste bitter, so I only add it when I serve the dish or not at all. I personally don't really like pepper.
I wish you the best with all this. My favorite bean is the lentil. It is the only one that does not have to be soaked overnight before cooking it. It has a really unique flavor too, one which I love. I cook a special sausage with it called Kielbasa. This adds wonderful flavor to the lentils and gives you protein too. You do need to refrigerate the soup or stew that has it in it after you cook it though, otherwise it will spoil, of course. Kielbasa is pretty cheap here where I live, so I assume it might be so where you live also. It is also called Polska Kielbasa or Polish Sausage.
