Only @Saelben could make sense of a not finished typing that i fell asleep in the middle of but i must of accidently hit enter or post reply on my phone. :p

Well, I still wanna send you a bunch of food and frustrated that will take so long or and most likely not get to you. :(
 
If you have rice... Grain + Legume = Complete protein. (+) peppers & onions = vitamins and trace minerals. You can live -healthy- eating nothing but rice & beans & peppers/onions for every meal, forever. Some societies have. It's a boring diet, but a healthy one.

Cooking beans is very easy...
Dried... Let soak overnight or boil hard for 1-2 hours to soften.
Fresh or presoaked or dried peas... Bring to boil until soft. ((Everything beyond this adds flavor and variation, which is awesome, but unnecessary.))

Cooking rice is (can be) very easy...

Add rice to boiling water... Cook until soft (test), usually about 10 minutes. Drain.

Adding oil or meat or veg to rice and beans? Awesome!

Bean Soup!

If you have oil? (Veg oil, or animal grease). Sauté the onions in the oil. If not? Skip that step, and add the chopped onions with everything else. Add beans. IF you have meat stock or bouillon? Add that. If not? Add water. Cook for 1-2 hours, stirring frequently. Mash up the beans a little for thickness. Add milk right near the end. Add salt and pepper.

Any other veg or meats you have? Can easily be added to the soup right for the very beginning.
 
This is a desparate start of a thread. Really desparate.

It's this way for me the last week to two weeks before Social Security Perm. Disability gets deposited into my acct.

With a can of beans (I do this all the time, actually) I rinse the beans, put them in my bowl, put in some balsamic vinegar and that's it! If you happen to have even the smallest amount of sour ceam or yogurt, just a spoonful of that would taste awesome!

If you have a crock pot, if you don't have chicken broth, just add water, throw in some brown rice, frozen veggies and if you eat chicken, rinse it well and cut into thirds and cook on "high" for however long. (I never measure). I also add salt and Thyme, but whatever you like. I eat this mush in wet tortillas, microwqved for 2 minutes.

I'm actually on a G.E.R.D. diet. snif also, I shop 4 the whole month so I freeze extra tortillas and things.

Ah, Cucumbers with balsamic vinegar would be great also!
 
I have what is called a Crock Pot or Slow Cooker. This allows you to put some rice and beans into it along with some veggies and let it do the cooking while you are out for the day. Can you obtain one of these? You can order them from amazon.com if you have access to a bank card or credit card. I saute the onions before I add them, but again, as others have mentioned, this is not required, it just helps the soup or stew taste better. Salt is good, as is a bit of pepper for some folks, but I personally have found that pepper makes anything you cook in a Crock Pot or Slow Cooker taste bitter, so I only add it when I serve the dish or not at all. I personally don't really like pepper.

I wish you the best with all this. My favorite bean is the lentil. It is the only one that does not have to be soaked overnight before cooking it. It has a really unique flavor too, one which I love. I cook a special sausage with it called Kielbasa. This adds wonderful flavor to the lentils and gives you protein too. You do need to refrigerate the soup or stew that has it in it after you cook it though, otherwise it will spoil, of course. Kielbasa is pretty cheap here where I live, so I assume it might be so where you live also. It is also called Polska Kielbasa or Polish Sausage.
 
nay, amazon is not a viable source for buying, but probably could get something liekt hat somewhere.

I will definitely try it as soon as I can :)
