You can replace things with other things too. It's the principles that can be applied and then adapted to what you have and what suits.
It's a really, really beautiful, healthy treat book, I bought a copy for my oldest daughter when she was a vegan (for many years until she got too sick) and my youngest daughter loved it, so I bought her and copy, this Chrissy and my oldest daughter bought me a copy.
 
One of my favorite sweet treats is stuffed dates, sometimes dipped in melted dark chocolate. If I'm in a hurry, I'll just stuff them with my nut of choice (walnuts, almonds, Brazil nuts, or cashews) and a couple chocolate chips. If I have time, I'll stuff them with peanut or sunflower seed butter then dip them in some melted dairy-free dark chocolate chips, then stick 'em in the fridge to harden.

The latter being my version of a reese's cup. Here's a video using almonds for visual inspiration (I don't use oil or sweeten the melted chocolate like they do, the dates are sweet enough and I limit my oil intake, as well):


This one is a little more involved, but is SO delicious, and can be eaten as raw cookie dough, can be made into balls and refrigerated, dipped in chocolate - or not, can add chia seeds to them, or just bake them as the recipe suggests. You can also switch out the chocolate chips and add raisins and cinnamon, or dried cherries, dried cranberries....get as creative as you want:

Chocolate peanut butter vegan cake in a mug - this is so yummy and quick (I enjoy a lot of her recipes, minus that annoying damn theme song that plays in each one...lol):


Vegan nice cream - you can add fruit, chocolate, peanut butter, dates and a little sea salt, or whatever strikes your fancy to get that ice cream fix - or make it in a blender with a little more plant milk or water for more of a milkshake consistency:


Dessert hummus to dip apple wedges, strawberries, or bananas in - or pretzels, or whatever you wish (I have a particular fancy for chocolate peanut butter comvinations, if you can't tell...lol):

I forgot to mention that before I learned which plant-based milk I liked the best, I'd make my own banana milk by putting bananas and water in a blender. lol I'd chop celery and apples really small and pour the banana milk over them for my morning "cereal". All the crunch and sweetness I needed minus the stuff I didn't need/want.

For the best flavor for banana nice cream/milk/smoothies/baked goodies, buy the ones that are marked down as over ripe. That's when they're the sweetest. I peel them and freeze them individually on a cookie sheet first, breaking them in half or in three sections, then add them to a freezer bag, othrwise you get a big frozen glob of mushed bananas. I love the baby bananas (burro), but they're harder to find, and harder to peel.

I've (finally) committed to making the leap from vegetarian to vegan while my sister is away and I won't be quizzed endlessly while I'm still making the switch.

I have some dumb questions (and some less dumb questions that I'll probably have to work up the courage to ask) if anyone can help out.

Please keep this thread vegan-friendly - as in, if you think my choice is dumb etc, please write about that elsewhere!

First up - milk alternatives. This is the hard one for me, and has been my downfall trying to vegan in the past. I'm fine with soy on my breaky cereal, but I hate it in my coffee. Hate, hate, hate! And coffee gets me past that initial morning seroquel-hangover.

I'd prefer not to go almond, partly because it's all shipped from miles away, partly because of the farming land required. I've heard that oat milk is okay? Can someone help me out here? What do you put on your tea and coffee??

I havent read the whole post, but I put coconut milk or cream in my coffee.
You gotta get the actual coconut milk that has fat in it. I go to my local Asian market and get the cartons or in the Asian aisle, you get the Thai kitchen brand.
It is thick and somewhat sweet.
I use it with dunken donuts medium roast, it gets me outta bed.
I could use creamer actually, but prefer this.

Switching the honey for maple syrup (a personal weakness, but also, bees...they need their honey more than I do). As soon as I restock on maple syrup (emptied the bottle literally 2 days ago) I'm gonna give this a shot.

Sorry, yes, I should have said that!

I think in this recipe she suggests stirring it, then letting it settle, then stirring it again with a fork before putting it in the fridge. For some reason, that works well. Without the second stir, it settles a bit funny and kinda heavy/stodgy...the second stir makes it lighter and better mixed up.
 
Does anyone have any favourite jack fruit recipes? I’ve been intrigued for ages and have a couple of cans in the cupboard but I haven’t tried it yet. Lots of the recipes I’ve found look mind-blowingly hot! I don’t mind a little bit of a kick but nothing too super spicy otherwise my IBS will flare up
