Better Than Bouillon is a demi-glacé paste sold all over the US... Our Products - Better Than Bouillon ...Amazon UK & Costco carries it, but it was expensive as hell back in 2014. What’s $5 here is/was about £15 there. Their no-chicken & no-beef & other vegan options are kind of amazing. The reduced sodium versions of chicken/beef/etc. are dairy free. But I’m betting you can get Demi-glacé locally for a lot less than the Yankee import price. It’s one of my favorite things, because the jar just lives in the fridge, and it’s half a teaspoon here, 2 table spoons there. Dollup it in and it’s instant stock/broth... whether it’s in a pint glass or big ole soup pot.

The sauce for buffalo wings is just a capsaicin hot sauce (like Crystal, or Tabasco, but crystal is better // more cayenne less vinegar) + butter or margarine... or one can buy it premade (Franks Buffalo sauce is probably the best? It has dairy in it, so I haven’t had it for ages).

If I’m making buffalo chicken soup, or dip, there’s a lot more that goes into it, especially if I’m making it dairy-free, but buffalo chicken wings are just tossed in the sauce & served with ranch/Bleu cheese dressing & celery, easy as (classic American football food / pub food)... but I just like a hot broth, sometimes, even easier. All the flavour, none of the work (kettle on!) and only about 5o or 75 calories instead of 1,000+
 
I've never heard of demi glacé. Searching for it Waitrose sell a one use pouch for £3.25. Various forums say US people switch to maggi boullion powder powder in Europe. It's excellent but is vegetable flavour, they don't have a chicken one. On Amazon the chicken BTB you mention is £20.

LOL... Yep!

I will make a port wine reduction and other reduce-reduce-fawking-reduce-already-reduce saucy things on occasion... (pomegranate molasses I am looking at YOU) but making Demi-glacé is exactly one of those things I always mean to do at some point when I want to warm up the house by way of the stove (10 hours of simmering a giant stock pot down to Nutella / Marmite thick paste isnt... hard?)...But I’m just not gonna do it. I’m just not. Unless I’m being paid. Especially not when the commercial version is both cheap & readily available. But even if it wasn’t? I strongly suspect I’d just do something (anything!) else.
 
New ingredient to me - Aivar Macedonian red pepper paste, different to Turkish red pepper paste as they're minced rather than pureed. Delicious stuff. Used it in a fritatta with caramelised onions, chopped red pepper, petits pois, chilli flakes n some mozzarella.

(I kinda sorta mixed my hashbrowns and green beans together, like gravy. Which I don’t really recommend. As green bean casserole isn’t super fond of jalapeño. IE it tasted vile. But I wanted spicy-spicy-spicy. So it was a success on that front! LMAO.)
