I don't think what you describe is unusual actually. Where I have seen it a lot is in those with eating disorders who want to self harm. Its a seemingly more acceptable form of it isn't it? Less visible and obvious to others. Celiac sufferers are one of these but I think diabeties is the other condition that is vulnerable as well as intolerance's and allergies.
Its good you see it as what it is. Eating gluten is like eating poison when you have celiac.
Its awful all the imaginative ways we can find to be unkind to ourselves. I know that's true for me anyway. Awful how hard it is to learn to self care instead when distressed. I guess its no wonder when we are treated unkindly in response to being distressed when growing.
