Discovered a great salt replacement/alternative at lunch time today while eating a bowl of leftover split pea curry....lemon juice. YUM! I cut a small lemon in half and squeezed half of it into a small-ish soup bowl full of curry that had no salt in it and was pretty damn bland, and that little bit of juice hit all the right spots on the taste buds and kicked the overall dish up a few notches.
Supper was a tuna steak marinated in lemon juice, rosemary, and garlic...baked in the oven, roasted sweet potato fries, and steamed broccoli, drizzled with lemon juice. Dessert was sunflower seed butter blended with a touch of vanilla extract, maple syrup, and carob powder along with a handful of unsalted pretzels to dip in it.
I don't do chocolate anymore due to the caffeine content (sodium and caffeine of any variety are frowned upon in the cardiology patient consumption scene, apparently....as if I didn't already try to be incredibly f'n mindful of my overall consumption habits...grrrr), so carob powder and carob chips are what I'll be using in place of it. Grateful to have options, still.
