Lots of lemon water, lots of herbal infusion, and soon to be lots of cantaloupe...then later, some more cantaloupe and more lemon water, a big garden/wild foraging salad topped with some chickpea salad, and for dinner, a baked dish with eggplant, black beans, red onions, cherry tomatoes, home made marinara sauce, and vegan Parmesan "cheeze".
Re-seasoned the cold rice noodle salad and added lemongrass paste but decided to use roasted peanuts to use as a topping. Uh YUM. Leftover I'll use the tofu and add diakon for crunch.
Then made a quazi homemade refried beans w/coconut oil in lieu of lard, green chilies, cilantro, onion, red chili/black bean/garlic paste to use for a dip for lunch or snacks tomorrow. It was supposed to become a 6 layer dip but having no sense of proportion it ended up being a mega herbed 4, 5 when I add the guacamole tomorrow. (of course I had to taste test it all... so more nibbling for me).
I caved and ate junk tonight...a tin of Heinz spaghetti bolgnese with a big knob of butter on top, then Ocean Spray cranberry and raspberry juice, and a third of a Fry's chocolate cream....*sigh* *hangs head in shame*
