Tonight we made taco salad by using leftover salad fixings and added sweet potato tortilla chips, homemade guac, our salsa from last years harvest mixed with meatless crumbles, my recently discovered DIY vegan sour cream, topped it with chives. (pictured a few shots down)
Here's some grubbage kodak moments....
Tomato sandwich night...g/f vegan bread, fresh spinach leaves, fresh basil leaves, greenhouse grown local tomato, fresh peppermint leaves to make extract and tea with, and the creamy radish cucumber salad I made with the vegan sour cream recipe...
Chocolate covered strawberries and banana slices....made these twice in the last week or so...melt dark chocolate chips in a makeshift double boiler set-up and dip and refrigerate until they harden and ta-da....the chocolate started cooling off before I finished dipping, so it got a bit chunky on a few pieces...so good...
Greens and veggies locally grown by an organic farmer friend, freshly washed and dried and ready to be made into a basic salad, with lots more ingredients to come later...two lettuce varieties (Salanova mix and a buttercrunch head variety), carrots and their greens, white salad turnips (Hakurei variety) and their greens, and red radishes and their greens...I use stems, leaves, and all....
The taco salad from tonight....underneath all the toppings is the basic salad mentioned above with added spicy radish micro-greens, red bell pepper, red onion, cucumber, tomato, and topped with crumbled sweet potato tortilla chips, homemade guac, our salsa from last years harvest mixed with meatless crumbles, my new favorite vegan sour cream and chives...
I wish I could send out samples, too! I also wish I had the stamina, an endless bank account, the space, and the desire to open my own cafe'/meal prep/catering gig/food truck/free food shelter/or something along those lines, on a small scale, but I don't do formal processes and bureaucratic bullshit very well, so I'll stick with home cooking and sharing every chance I get. ?
Your mention of thai carrot soup and beetroot hummus have me drooling over here. I remember seeing someone post about chocolate hummus a while back, too, but can't remember who - my memory is like a damn sieve. I love that hummus, too! Especially with some peanut or sunflower seed butter mixed in and used for a dip with unsalted g/f pretzels. Mmmmm...
