LMAO... I have nooooo idea why, when half of Great Britain holidays in Spain & Portugal, why the go-to for Mexican food in the UK is GREEK. But it almost always is. It used to crack me up when my brother lived in the North his wild & varied (universally unsuccessful) attempts to get people to stop using feta. Really, if you’re ever in doubt cooking Mexican food? Think Tapas. Mexican food is really just Spanish/Portuguese food using local peppers & cheeses as close to the ones they used to use at home. Tomatoes instead of saffron. Salsa for sofrito. ((If you really think about it? A burrito is just paella someone got angry at not being able to get “right” and rolled the ingredients -which are damn good on their own, just not paella perfect- into a tortilla to eat later.))Huevos Rancheros, recipe on BBC Good Food, not traditional at all after reading up on it, though amnt at all surprised, nor much bothered as it was delicious. Used vegan Greek cheese.
Well feta is readily available everywhere here. Spanish cheeses, only more recently. Vegan feta also available everywhere here. I prefer vegan feta to vegan cheddar with this anyway. I used to use Cheshire, Wensleydale or Lancashire, but they don't have vegan versions of it readily available.Espresso
