Here's the recipe I used for colcannon:

1 head cabbage, cored and cut into slices
6-8 potatoes, cut into pieces
1 large leek, sliced into 1/2-inch strips
1 onion, chopped
1-2 T. butter
about 1 cup cream (or, fat-free half-and-half)

Boil potatoes till tender.
Heat butter in large skillet and saute onion and leek till they start to brown.
Add half the cabbage and stir till a bit wilted.
Stir in cream and the rest of the cabbage and cook till all is tender and to desired consistency.

Evie, any suggested modifications?
 
Thanks for the recipe, Hodge. I'll have to skip the cabbage (the only way the family will eat it is in cole slaw), but the rest is a definate go!
 
You're welcome, Lisa. I think it would still be very nice without the cabbage. I have to confess that even though I'm a lot Irish, I am not crazy about plain cooked cabbage myself. And I really don't like sauerkraut, despite the German-French part of the heritage. I do like it in colcannon, though, and I do like stuffed cabbage. Maybe it's the ultimate revenge of the genes, haha.

Brewis is a hard bread, sometimes also called "fisherman's bread" or "seafarers bread", as it was traditionally kept on ships as it has a very long shelf life. I really like it, I'll try to find a recipe for it, or else get Mum to post a recipe in her new blog.

I made your soda bread today and it was awesome!!! I think this was the first time I made bread without the bread machine. It was quite a sticky mess - maybe I didn't use enough flour to knead. And I don't know if I overkneaded, but it came out pretty hard on the outside and chewy on the inside. It's almost a meal in itself! It'll be really good with honey in the morning. Anyway, thanks again for posting the recipe!
 
Sounds like you did it just right. It has a different texture than store-bought bread. And it does make a bit of a mess...but for me, it's worth it.

I usually make this bread with soup and you're right...it's almost makes a meal all by itself.

Glad you enjoyed it. Now I'm craving some! LOL
