(Not trying to sell ya, She Cat, cross my heart! More tacos for meeeeee ;))
I forget people think of tacos as ground meat (suffocated with cumin, in a crunchy shell :wtf: )
Where I learned tacos (coastal) they’re usually a soft corn double tortilla charred a bit on the grill (or soft flour, or crunchy corn) and then filled w/ one of the following
- grilled steak (carne asada)
- grilled pork
- shredded pork
- grilled chicken
- shredded chicken
- beer battered fish or prawns // coconut tempura batter fish or prawns
- spiced grilled fish or prawns
- grilled veg
- fresh veg
- rice & bean
The meat is cooked really simply (burn it with fire!), it’s not usually seasoned except for salt & pepper until afterward, when people pick their favourite salsa (and there are about a dozen different kinds, only a few spicy, if people want spicy they usually add hot peppers & chilies) which range from sweet, to sweet & smokey, to citrusy, to herbaceous, to creamy, to bold, to spicy.
Street tacos are the simplest... meat plus onion, cilantro, radish & lime, or seafood plus shredded cabbage, lime, & creamy avocado sauce.. but the rest is sky’s the limit. Like sandwiches, you can stack in just about anything you want.
