What Did You Eat And Drink Last?

Having some of the soup I made last week with hot tea. Yummy butternut squash. :)

Sauteed yellow squash/zucchini/garlic/onion/riced cauliflower and broccoli added to Hungarian mushroom soup and steamed peas, served over top a veggie burger topped with vegan smoked provolone. Sort of like veggie burger helper? Yummy clean out the fridge comfort food. Currently sipping on stinging nettle/ginger tea.
 
@Friday - What does a canned beet taste like? I used to get them for my ex to have with cottage cheese. Cold, wet, what?? I do want to try roasted beets like what I see on cooking programs. Do they taste the same, but are warmed? Tks. VB

Roasted beets are almost, but not quite, entirely different from canned beets. A lot like fresh/frozen/canned peas are all super different from each other, even though they’re the same durn thing.

Canned beets are irony/mineraly, sweet, crisp...
Roasted beets are deep, sweet, & like a (cooked) carrot + potato had a baby

For years I used to make roasted beets about once a week (co-op delivery!) Wicked good with olive oil & sea salt, or a bunch of other chopped veg (carrots, potatoes, sweet potatoes, etc.) & herbs over the top. But the only preserved beets I had were pickled. Canned ones have the same texture as pickled, but are earthy instead of zing. I’m still not quite sure what to make of them on a burger, it’s one of those... I feel like I could loooooove this, if I built my burger differently (IE not plain, but with onions/tomatoes/lettuce/ketchup/pickles/mustard)... but right now, I just in the head tilted “Ma, that’s just plain weird.” Stage. ;)
 
For break-fast I had lots of water, some apple/celery/lemon juice with chia seeds and greens powders, and a bowl of quinoa cereal topped with strawberries, bananas, and flax milk.

For lunch, I had Vegg salad made with chickpeas, mustard, red onion, celery, vegan mayo, and a dash of kala namak salt served on a bed of greens.

For supper, we're having black bean sweet potato tacos served on brown rice tortillas, topped with some of our homemade salsa...made mostly by the following recipe:

Meanwhile, I'm sipping on a cup of stinging nettle/peppermint/chaga mushroom tea.
