Freshly snapped green beans, cooked with thyme, topped with freshly picked and chopped tomatoes, cucumber, and onion - alongside a stir-fry, of sorts, with lion's mane mushrooms, carrots, carrot greens, garlic, onion, celery, and beet greens, seasoned with some adzuki bean tamari.
I also cooked up a pan of the chicken of the woods mushrooms yesterday with vegan butter, garlic, sweet onions, cherry tomatoes, and kale. YUM! We sampled a small portion first to make sure we aren't allergic/sensitive to them.
The mushroom we got was so big there's no way we could eat it all in just one meal, so we sliced it into 1-2" thin pieces and vacuum sealed it to freeze for later. It's very clear how it gets its name. I'm excited to try it in other dishes. ?
