ETA… REAL corned beef. BLISS. Cured -bright red- beef brisket (flats & points), simmered with pickling spices (bay leaf, coriander, clove, whole allspice berries, & lots & lots of yellow mustard seed) for hours, until fork tender, & the bites from cross grain slices melt in your mouth. NOT the SPAM like substance in a can, in the UK, purporting to be corned beef! Shudder.
