LOL... Just like grilling burgers!* :D Big fat burgers, on medium or lowish heat. (Rather than the turn and burn thin ones on a screaming hot grill). If you cook it lower / indirect with the lid shut it does that aaaaawesome red smoke ring / glossy surface all round the outside). Not as key for meatloaf since ketchup glaze, but I still love a smoke ring. Half and half bbq sauce/ketchup on the glaze is also awesome.

Go a little light on the filling / meat heavy ratio and smother the extras (grilled onions, bacon, mushrooms, gravy, toasted breadcrumbs, etc.) over the top afterward.

If it’s wicked hot out I usually boil/ mash the potatoes the night before, then add a lil water to steam out and let them heat up on the grill and get a little smokey as the meatloaf is cooking. If it doesn’t get hot enough by the time the meats done god invented microwaves for a reeeeeeason ;) Granted, I also feel that way about air conditioning, but I don’t happen to own an air conditioner.


* We do individual meatloaves (when I’m baking them in the oven I use a giant muffin tin for “meat muffins” :bag: ) so they’re really not that different from burgers. Just more McRib Rectangle than Burger Round. But we’ve also been suddenly out of buns (get back here, dog!) and simply treated burgers like meatloaf. Totally works. And no fear of crumbling. But a big one should work just fine, although I’d stick a piece of tinfoil under it just for peace of mind.
