Grab and growl clean out the fridge night. Mung bean noodles with garlic, melted earth balance soy free buttery spread, nutritional yeast, celtic sea salt, ground black pepper, and topped with kale and spicy microgreens, a few Thai spring roll bites, and a romaine lettuce boat topped with a spoonful of tu-not chickpea salad.
Steamed yellow and red beets drizzled with white balsamic vinegar, more corn on the cob, and sauteed garlic, shallot, onions, yellow squash, and zucchini.
It was kind of screaming for Creme Fraische? Shrug. Allergies. A little creamy avocado sauce with lemon would have worked, too, but? Shrug. Laziness. Didn’t have any & wasn’t going to make any. Still wicked good.
