Started the day with freshly made juice that consisted of a whole head of celery, 4 granny smith apples, a big knob of ginger, two giant handfuls of kale, and two average handfuls of kale microgreens.
Munched on a small bowl of leftover stir-fry that had chopped collard greens, broccoli, red bell pepper, onion, and plant-based kielbasa thingies.
Dinner was veggie fajitas with black beans instead of refried beans and guacamole instead of cheese - with corn tortilla chips and salsa on the side.
